It contains a lot of fiber, minerals and - attention, diabetics! - inulin. What's most interesting is that tubers can be dug out from under the snow even in winter and cook various dishes. But if you live in a region with a high snow cover, then dig it up like potatoes in the fall and store it in a cellar, covered with wet sand. In this case, the temperature should be zero. I advise city dwellers to keep it in the refrigerator. If you have storage problems, dig it up in early spring.

And now sores - for whom and how? Checked: within a month and a half, carbohydrate metabolism returns to normal, if you use Jerusalem artichoke regularly; after three months - fat. The nodules look almost like potato, only the shape is more oblong and the eyes are pronounced. If rinsed well, you can eat them raw. The recipe is simple - three times a day, one tablespoon before meals.

Did I promise meals? Take tubers, rinse and dry them thoroughly, chop finely and add to any vegetable salad... I tried adding to the fruit one - nothing too. For those who do not like to experiment, mix Jerusalem artichoke with green onions, tough eggs. In a traditional vinaigrette, it goes well with the rest of the ingredients, and even instead of potatoes, I added it to the soup. Just take one piece of advice: when the soup is boiling, separately fry the onions in a skillet mixed with green (in principle, you can do without green) and finely chopped carrots. And then add to the soup - delicious!

Once I tried to dry Jerusalem artichoke, and then pour it over with milk.Both tasty and healthy! Another time, the slices were dry and brown. I was advised to grind them in a coffee grinder and I got medicinal coffee!
