Ingredients

Mix:
Fresh yeast 2 g
Syrup 10 g
Kefir 50 g
A little flour from the total
In the bucket:
Wheat flour 280 gr.
Whole grain flour 120 g
Dispersed Wheat Sourdough 150 g
Water 150 g
Whole Yeast Blend

Cooking method

  • Kneading, rest 45-50 minutes, second batch. During the second batch, stir in 1.5 tsp. salt.
  • Forming, proofing in a basket, baking on the hearth with steam for the first 10 minutes 240 * C and another 50 minutes 180 * C.

-1 tsp molasses
-50 ml of tea
- a little flour from the total amount
In a bucket x / n:
-300 gr wheat
-85 gr ground wheat (wholegrain)

-200 gr wholegrain leaven
-150 ml of tea
During the second batch I added
-2 tbsp. l. flakes "4 cereals"
-2 tsp salt
Forming, proofing, baking at 180 * C.

I run it a couple of times with a break of half an hour and there are no problems.

Misha, hello.In the photo, it is not very clear what the millstones are? What are they made of? Do they look like iron knives, like those of a coffee grinder, or really stone millstones? I want to buy this harvester to grind grain and roll the dough on dumplings. By the way, have you already used this nozzle for rolling out the dough?

Recipe:
-90 gr whole grain
-310 gr wheat
-5 gr fresh yeast
-20 gr molasses
-200 gr of old kefir
-190 g sourdough

-1 tsp whipped cream (33%)
Baked at 180 * C for 60 minutes.

I knead on the "dumplings" the first batch for 10-12 minutes, the second batch for 7-8 minutes, then proofing until the preparation doubles in volume (these are always different results in time).

I have Gamma-7-01 with three attachments since 2002, I use very often, especially a meat grinder, I am very satisfied. And now I saw: a universal kitchen machine Gamma-12-11 with eleven attachments, but I can't find the price. I wonder if they will be sent from the factory if you order? Maltose syrup - composition: brewing barley malt, corn flour. Dark, sweet, viscous, aromatic. For rye and mixed bread, it's just perfect (I add to white). If you do not come across it, it is difficult to buy, do not be discouraged, replace with honey, brown sugar - the taste will be slightly different, but this is if you find fault.
