Herring forshmak

For 250 gr herring fillet

1 processed cheese (or 2 slices of white bread, soaked in milk and then thoroughly squeezed)
2 hardcore eggs
1 medium onion
1 apple (preferably Antonovka)
lemon juice or table vinegar 1 tsp. the spoon
table mustard 1 tsp. the spoon
honey 1 tsp the spoon
vegetable oil (preferably fragrant sunflower oil) 1 table. the spoon
mayonnaise (optional) 1 table. the spoon

Separate the fillets from the herring, remove the bones. If the herring is very salty, leave it to soak overnight in cold strong tea or milk or just water.
Onion, eggs, cheese, grate an apple, cut herring fillets into cubes. Puree everything together with a blender or mince 3 times through a meat grinder with a fine grid.
Add the rest of the ingredients and mix thoroughly.
Bring to taste (you may need a little more vinegar or honey) and put it in the refrigerator for a couple of hours.
