Structure

beef (shoulder, shank or other parts for stewing) - 450-500 g,
onion - 1 large piece,
potatoes (non-boiled varieties) - 3-4 pcs (~ 500 g),
bell pepper - 1-2 pcs,
tomatoes - 2 pcs (can be replaced with tomatoes in your own juice),
garlic - 2 cloves,
tomato sauce or pasta - 1 teaspoon
broth (bone) or water - 800-1000 ml,
dried paprika - 1 tablespoon,
ghee (lard) or vegetable oil for frying,
a pinch of caraway seeds (optional)
salt
Preparation

Wash the meat, dry and cut into cubes with a side of ~ 1 cm.
Peel the onion and chop finely.
Wash bell peppers, remove seeds and cut into cubes.
Wash the tomatoes and also cut into cubes.
Wash the potatoes and cut into large cubes with a side of ~ 1 cm.
Peel the garlic and finely chop or pass through a garlic extractor.
In a thick-bottomed saucepan (you can cast iron), melt the lard (or vegetable oil) and heat.
Add onion, lightly salt and cook, stirring occasionally, until soft.
Remove the pot with onions from the heat, let cool slightly, add paprika and stir.
Heat some oil or lard in a clean frying pan and fry the meat in portions until golden brown.
Add chopped garlic and a pinch of cumin.
Pour in a little water (so that the meat is not cooked, but stewed in a small amount of liquid).
Add potatoes to the meat, increase the heat, stir and fry, stirring occasionally, for ~ 3-5 minutes. Salt.
Add chopped peppers, tomatoes and tomato sauce.
Pour in the broth or water so that the liquid only covers the vegetables.
* Hungarian goulash soup is a rather thick dish, so the amount of liquid can be adjusted as you like.
Bring soup to a boil, cover and cook over low heat for ~ 15 minutes or until potatoes are tender.
Turn off the finished soup and let it brew under the lid for ~ 10-15 minutes.
* At the end of cooking, dumplings (chipeta) can be added to the goulash soup:
Dough for dumplings (chipette)
1 egg,
flour,
salt
Break an egg into a bowl, add salt and enough flour to knead a hard dough. Wrap the dough in plastic wrap and leave for ~ 10-15 minutes.
Pinch off small pieces from the dough, the size of a fingernail and throw into the boiling soup (if desired, the dough can be cut into noodles). Serve goulash with dumplings right away!

Now, as I did: I cut everything. The beef I had was not fresh frozen from the market. on it and cooked.I cut the onion, browned it on "frying vegetables" in vegetable oil, added a little salt, added a tablespoon of paprika to the slightly cooled onion. She turned on OO again, added meat to the onion, fried it slightly. Added chopped garlic. I poured a multi-glass of water and put it on the high pressure for 20 minutes (apparently my beef was not young because in the end it was still a bit harsh, so I put it on the high pressure for 10 minutes again) Then it became stewed as it should ...
I added potatoes, peppers (I had half each red, yellow and green), because the tomato was not fresh, but there was tomato juice from the tomatoes at home in its own juice, my mother made about half a liter, and used it. Already the mood is gone.
True, we managed to deceive her (but this is also not an option) - they turned on the dir again. "Toasting", closed and blocked the lid as well as the valve. When the pressure nevertheless gained and the valve was blocked, they were transferred to HP for an hour. And thanks to such dances with a tambourine, they finished the dish. Imagine, if we had time to leave home ... we would have remained hungry
