Chicken breast salad "Delicious dinner"

A great opportunity to feed those who don't like vegetables with vegetables.

2 chicken breasts (400 gr)
2 medium onions
2-3 feathers of green onions or one medium onion
1 kg frozen vegetable mixture (this time I had an "Asian" mixture - cauliflower, leek, mushrooms, celery, carrots, green peas, green pea pods, bamboo shoots ... but any will do just fine)
slice of celery root
piece of ginger root
2 cloves of garlic
6-8 pinky-sized pickled gherkins
2 table. soy sauce
2 tablespoons cooking oil for frying
2 tablespoons olive oil for dressing
mayonnaise
curry powder, salt, pepper

Dice the onion and fry in a large frying pan in 2 tablespoons of vegetable oil until golden brown (it is better to overcook just a little than undercooked).
Cut the chicken breast into small pieces and add to the onion. Sprinkle generously with curry powder. Fry until meat is tender. Do not overcook! Pieces of breast are fried very quickly! It is very easy to check if the meat is ready. Cut the largest piece. If the meat is white on the cut, it's ready. If pink, continue frying.

Pour frozen vegetables into a frying pan, pour in soy sauce, add ginger and celery grated on a fine grater and simmer with constant stirring until the liquid evaporates. Add the garlic grated on a fine grater, mix. Cool down.

Cut the cucumbers into rings, finely chop the onion, mix the salad, season to taste with salt and pepper. Pour in olive oil and season Chicken breast salad Delicious dinner
