Broccoli puree soup

1 onion
1 clove of garlic
2 potatoes
3 table. tablespoons of vegetable oil
1 liter of broth (you can vegetable, you can any meat)
500 gr broccoli
0.5 bunch of parsley
100 gr sour cream or cream (NOT sour!)
salt, pepper, nutmeg

Disassemble the broccoli into inflorescences, cut the trunk into pieces and boil in water or steam with the addition of lemon zest and rosemary. Put in a colander.
Heat vegetable oil in a saucepan with a thick bottom, add diced onions, garlic, potatoes. Simmer a little over low heat. Pour in broth and cook until potatoes are tender.
Add chopped parsley, broccoli and puree directly in a saucepan with a blender. Add sour cream or cream, salt, pepper, nutmeg and bring to a boil.
Thinly cut yesterday's loaf, fry in butter. Spread hot croutons with melted cheese or sprinkle with finely grated hard cheese. Or you can just serve it with small croutons.
