Ingredients

Water 1.25 cups
5% apple cider vinegar (6% red wine vinegar) 2 tbsp. l.
Powdered milk 1.5 tbsp. l.
Butter 2 tbsp. l.
Brown sugar (honey) 1 tbsp. l.
Salt 1.5 tsp.
Cocoa powder 1 tsp
Instant coffee (powder) 1 tsp
Wheat flour 2.5 cups
Rye flour 1 cup + 2 tbsp. l.
Yeast 2 tsp
Leaven 1 tbsp. l.

Cooking method

  • Place the food in the dish in the order described in the instructions for your bread maker.
  • Cut the butter into small pieces. Place salt, sugar, cocoa and coffee in different corners of the bread machine.
  • Mode "Black bread
  • Today this is the best recipe for rye bread in my arsenal (but this is for now, because I keep looking for new, even more delicious ones).

I found the recipe on the internet and changed it somewhat to my taste. In parentheses, I write the ingredients that I adjusted.

I am a very young baker, and I love black bread very much - just plain rye bread without wheat flour. After buying panifirin and malt, I finally achieved what I wanted. LG bread machine, Basic mode, water - 1 cup, malt - 1 tbsp. spoon, rast. oil - 2 tbsp. spoons, rye flour - 2 cups, rye flakes - 2 tbsp. spoons, sourdough - 1 tbsp. spoon, salt -1.5 tsp, sugar - 1 tsp. spoon, panifirin -3 tsp, improver "Home cooking" - 1 sachet, yeast - 0.5 tsp. The consistency of the dough is a low bump in the center. After baking, there are streaks on the crust, but the crumb is not steep, but fine and shiny. Try it!

Dentist, tried your recipe. It turned out the first time. I liked it. Differs from previous breads. So for a change I will do it too (until we finally purchase additional ingredients). By the way, I here seduced my neighbor to buy a bread machine, treating their family (specially prepared for them) loaf. So we have one more customer for packaging.

"Belotserkovskaya" is good. I did with her. I also use "Makfa", I also like it. There is also "Kolomoevskaya", it is sold in "METRO", but you have to take 5 kg in white bags (in my opinion). These flours are marked with "baking wheat flour". This is not written on Kolomoevskaya in packages of 2 kg and 1 kg. I also bought this flour (see photo). It says “unique technology. High-gluten wheat of the south of Ukraine ”. I haven't tried it yet. I bought it at Velikiy Kisheni, which is located in the ALTA-CENTER on Petrovka. There is also all kinds of flour: rye, oatmeal, buckwheat, corn, packaged in 2 kg. Maybe somewhere else, I don't know, I haven't found it. Dentist, thanks for the recipe, it's very accurate. The bread turned out great, even though I have a different bread machine and, accordingly, a different measuring cup - 310 ml - everything was measured "by eye".Now I will often bake this particular black bread for the whole family - a very simple recipe, a real "black" taste and color. The bread is soft, airy enough, porous. In general, excellent black bread !!!

Maybe someone will be interested - I made small changes when I fell asleep the ingredients:
+ 1 tbsp. l. dry Saf-kvass (for color),
+ 50 ml of water (to dissolve Saf-kvass),
- I didn't throw coffee, but cocoa - 2 tsp. (I am against coffee - I have a child!),
+ instead of water there was strong tea (for color),
+ 1 tsp I also put sourdoughs on rye flour.
- vinegar was apple cider 6%, I don't like honey - put sugar.

I don't know if my changes have affected the taste, but the bread is just super!

You do not need to dissolve milk powder and coffee.
butter is simply softened to room temp. if melted, this is also excess liquid
This amount of flour is for a small loaf of bread.

And it turned out very tasty. But instead of coffee, I put a coffee drink made from ground chicory, but I think it's not important. Baked with live yeast, I like them better.
