Recently bought a Kenwood BM900 bread maker.

The overall impression of the bread machine.
Overall, the build quality is good and the looks are very nice.
The cover is removable, because of this, the reliability of its fastening raises some concerns. It looks a little flimsy. There is no center handle for lifting the lid. Only on the sides - finger hooks. In principle, you can open / close by holding and holding one hold from one side, but this causes a slight skew of the cover (and uneven load on the fasteners), so it is better to hold it on both sides.
There is a window in the lid, but there is no backlight - therefore, its efficiency is zero (you can only see what is going on inside by shining a flashlight into this window).
The advantages include a large bucket (2 sizes of bread - 1 kg and 1.5 kg) in which there are two screws for kneading the dough.
Ease of controls. The oven has 11 programs (of which 7 are for baking bread, and the other 4 are oven, jam, kneading 2 types of dough). There is no possibility to program. Choice of crust color and express baking (just over an hour). Timer.
As far as I was told in the store, the company is positioning it as a replacement for BM250 (256), only with a dispenser and an increased bread size.

Note: before using it for the first time (besides just wiping it with a damp sponge), the heating coil must be calcined to get rid of the unpleasant odor. To do this, turn on the 11th program (baking) for 10-12 minutes without a bucket with an open lid. If necessary, repeat once more after cooling completely.

In the store we were given an already printed book of recipes for this bread maker in Russian, so the first experiments in baking were done according to the manufacturer's instructions.

First bread.
The very first recipe was taken as a basis: White egg bread on the 1st program (standard mode).
It was during Lent, so eggs were excluded from the recipe.

Lean white bread (loaf size 1 kg (1.5 kg), medium crust, standard setting)
Water: 370 (490) ml
Vegetable oil: 1.5 tbsp l. (1 tbsp. L. Sunflower + 0.5 tbsp. L. Olive)
Flour: 600 g (800 g) (premium wheat).
Salt: 1.5 tsp (2 tsp).
Sugar: 4 tsp (2 tbsp. L.) (Brown reed).
Yeast: 1.5 tsp ("Saf-Moment" bakery fast-acting dry, made in Russia).
Added to the bucket in the order indicated in the recipe. For the yeast, I made a depression in the flour. For measurements I used a measuring cup and spoon from the kit, as well as an electronic balance.
Program duration: 3 hours 15 minutes (3 hours 25 minutes) (of which baking 55 minutes (65 minutes)). After the end of the program, after evaluating the color of the “roof” of the bread, he put it on baking for another 10-12 minutes.

It was experimentally found that the degree of baking of the "roof" practically does not depend on the size of the bread. After Lent, the addition of eggs and milk radically changed the situation - the "roof" became beautiful and ruddy.
The lean bread turned out to be a little "humped": this is due to the fact that there are 2 screws in this oven, and as a result of mixing between approaches, a small "mound" is formed above each. This does not affect the taste or the approach of the test at all. The "non-postal" dough behaves differently - the "roof" is uniformly convex.
The bread maker is great at kneading the dough and it works great. The bread is light and tasty.

So far, there are no complaints about the work of the bread maker. Everyone is happy.

PS: if you put bread to bake overnight, then its heart-rending sound signal (the time for adding additional ingredients is about 20-25 minutes after the start of kneading) and clicks when opening the dispenser can wake up.

Pay attention to the yeast, best of all "SAF-MOMENT" with a scoop on the label. The recipes were taken from Kenwood 450.

Hello everybody! Here we have baked another bread in kenwood bm900 and for some reason the crust that rises above the bread pan is not baked. Our problem turned out to be that we measured flour with a measure from the oven kit, and on it the measures were in milliliters for liquid, and not in grams. So it turned out that the slurry came out, not the dough, and therefore the bread was baked on and the dough did not rise, in short, the proportions were violated and the porridge was boiled !!! And now, when we figured it out, everything is simply gorgeous and the weight of 1 and 1.5 kg is baked without a difference and the shape and appearance is obtained as here in the photo posted by other members of the forum. Everything is great in one word. I fell asleep, chose, for example, the first main program, the color of the crust and the mass of baked goods, pressed start and forget, everything works out by itself! So that beginners do not suffer, I want to write the proportions: for example, for bread for 1 kg, pour 350 ml of water with a measure of native water, pour 2 full measures of flour to the top and another 150 ml (so as not to weigh flour on the scales), the rest of the ingredients according to the recipe from the book. For 1.5 kg of baked goods - water 500-520 ml, flour 3 full measurements to the top and another 250 ml according to the marks on the measuring, the rest according to the book and recipe for 1.5 kg. I personally checked it - everything works without problems, it is baked and the bread turns out to be lush and plump, like a young large breast !!! Bon appetit and good thoughts. The other day we also became the owners of this stove. We are very satisfied after the moulinex, which baked a brick in fast mode for the first time, and did not turn on the second time. We managed to get the money back))
The first thing we cooked in it was pizza dough. It turned out to be very lush, like a cake. Plus I used the sheets not for 30, but for about 27 cm. The pizza was on a thick dough)) but it was very tasty. I myself would not have kneaded so. I used fast pizza yeast (such a small bag is designed for 500 grams of flour, so a little less is needed for the recipe). Also, the program for 1.5 hours: 30 minutes kneading, 60 lifting. I took out the dough 10 minutes after kneading, it was ready. If you like thin crust pizza, I advise you to reduce the proportions by a third or roll them out more than 30 cm.

She dreamed of making rye bread more than anything else. Everyone knows that he is the most capricious. I chose the recipe from the third section (with dark flour).
The first one turned out not very, very dense dough came out, not distributed in shape, cracked ... baked, but the bread is not even and not porous inside. It is not clear what kind of dark flour is needed according to the recipe, maybe that's why the bread was very dense.
Today I refined this recipe and got a great result. here's what needs to be changed:
I have rye flour after yesterday's - 450 gr. (peeled rye flour), accordingly increased the amount of white flour.
White flour (premium grade) - 150 gr.
Add kvass wort to the recipe (I found a liquid concentrate) - about 15 ml, a little more, there will be darker bread.
water is not 340 ml, but 370-380, because the dough is otherwise too dense.
I added half a spoonful of lemon juice
everything else is unchanged.
Now program 3, fast mode. At the end of the last rise, turn off the program and wait for the dough to actually grow and evenly distribute in the form. As soon as this has happened, we turn on program 11 - baking. In an hour, the delicious bread is ready. It was difficult to shake it out of the mold, but the stirrers remained not in the bread, but in the trough, there was no need to pick them out.
Of course this is a recipe for express bread ... but still ok. The real one should be leavened, and it is cooked for 3 days ...
You can leave everything in the recipe unchanged, except for the amount of water, you definitely need more and so that it is lukewarm 32-35 degrees.

I still have a question about flour, where unbleached flour and wholemeal flour are often mentioned in recipes ... Under what name can you buy it in a store?
I found general purpose wheat flour ... I believe it is "not bleached" flour, but I may be wrong.
