Ajapsandal with potatoes

Ingredients

Eggplant 600-700 g
potatoes 500 g
tomato 500 g
large onions 2 pcs.
Bulgarian (preferably red) pepper 2 pcs.
garlic 2 tooth.
different herbs: parsley, dill, cilantro, but always basil
vegetable oil

Cooking method

  • Ajapsandali (or more precisely the name) is prepared according to different recipes. Basically, this is eggplant caviar, but with large long pieces of eggplant and fragrant herbs. I suggest one of them - a recipe with potatoes, well, very tasty!
  • Wash the eggplants, peel and sprinkle with salt, leave for half an hour until the juice separates. Then squeeze out, the excess salt can be washed off and the eggplant squeezed out again.
  • Scald the tomatoes with boiling water and remove the skin. Cut the onion into cubes, the potatoes into 1cm (approximately) cubes, the pepper into squares.
  • Pour oil into a cast iron pan, heat it up and put the prepared potatoes. Stir and fry for a few minutes until tender (potatoes should be soggy) and add onions. Simmer for a few more minutes until the onions are lightly browned. Then we send eggplants and bell peppers to the pan, mix everything, salt with pepper (if necessary) and we do not interfere anymore! Put chopped tomatoes on top, close the lid tightly and simmer over the slowest heat until the potatoes are ready (after all, they are prepared in different ways).
  • When the vegetables are cooked, sprinkle with chopped herbs and garlic on top. Cover for another 3-4 minutes. Everything, the dish is ready!
  • Vegetables are stewed in their own juice and basil gives a special flavor. However, if it is not there, it should still be tasty.
  • You can take any amount of vegetables. Their ratio is approximately the same. The eggplant is slightly larger. If cooked correctly, then all the vegetables will be whole and juicy.
  • P.S. This dish, I think, is good to cook in a slow cooker and slow cooker.

Amazingly tasty dish !! I did it in MV, everything was like in the recipe, but I couldn’t stand it and interfered a couple of times. When I reported the last vegetables, I turned on the Stew mode. It was stewed for almost 2 hours ... I got such a potato. But it was worth it! The husband was delighted. As a child, he lived in Georgia and all the time he compared our squash caviar with Ajapsandal. They buzzed all my ears! Said very similar. Thanks for the recipe!

Vika, try to cook in a pressure cooker. You can do it on a whim. You know how much vegetables are cooked in it. It is important not to overexpose, so that the malasha porridge does not work out.
I can’t tell you anything, because there is no pressure cooker.
If I need to cook faster, then I cook in a heavy frying pan under the lid, and if I don't feel like hanging around in the kitchen at all, then in the MV.
Equally tasty, but in MV it is prepared with less oil. More childish ...
