Kugel-porcelain mushroom

Ingredients

Mushrooms 200 g
Celery 1 stem
Onion 1 PC
Vegetable oil 3 tbsp. l
Farfel 2 glasses
Salt 1 tsp
Egg whites 2 pcs
FOR PORCELAIN
Flour 225 g
Eggs 2 pcs
Salt
Water 1 - 2 tbsp. l.

Cooking method

  • One of the characters of Sholem Aleichem said: "With the Jews it is only good to eat kugel." So let's get started ...
  • Fry mushrooms, celery and onions in oil until soft. Pour the porcelain with water and leave to soak for a few minutes. Squeeze thoroughly in a colander. Stir in the porcelain, salt, fried mushrooms with vegetables and egg whites (whisk is better). Grease a baking dish with vegetable oil, transfer the mixture there and bake with the lid closed in the oven for 30 minutes. at t-re 180C.
  • Cooking porcelain:
  • Mix flour, eggs and a pinch of salt in a bowl (I did it in HP on the DUMPLING mode). Gradually add 1-2 tbsp. tablespoons of water until you knead the dough. Continue kneading the dough until a smooth, non-sticky ball forms. Add a little flour if necessary. Place the ball in a bowl, close it and leave for thirty minutes. Sprinkle flour on the table. Roll the dough with your hands into a thick "rope". Leave it at room temperature for 1-2 hours to dry slightly. Cut the dough into pieces, then grate on a coarse grater. Dip the dumplings lightly in flour and spread out to dry on a baking sheet or on baking paper.

Note

The word "kugel" - or "kugol" or "kugl", depending on what dialect you are used to, means "round" in Yiddish. The name is collective, it does not denote a species, but a genus. The shape remained round for centuries, but the content of the kugel changed.

Kugel - pudding - was a common food on Shabbat. Together with the cholent, he was usually taken to the baker's on Friday and taken away ready the next day. Usually unmarried girls and unmarried people went to the baker
men, and the trip itself was part of social life. The meeting at the baker's was a kind of youth club where you could chat with each other, gossip, or look out for a bride or groom. Nowadays, kugel is usually made from noodles (vermicelli), dried fruits, fresh fruits, vegetables, caramel.
Basically, kugeli are dishes that are in between puddings and casseroles. They use egg filling without adding milk.
PARFEL : Due to its size and shape, this dish is also called egg barley. In fact, porcelain is small dumplings made from grated noodle dough. In Yiddish, the word "farfallen" means "disintegrated into parts", that is, it characterizes the state of the grated dough.

Ashkenazim make porcelain on Rosh Hashanah: the many tiny dumplings symbolize fertility, and their round shape represents a full year cycle.
