Ingredients

Pork meat - low fat underwire.
Pickled bitter pepper
Dried apricots

Cooking method

  • The meat was marinated in a liquid marinade for 1.5 days.
  • I put pickled bitter pepper and dried apricots on the finished meat. I rolled it into a roll, tied it with culinary thread so that it would not crumble and be denser, and put it in a slow cooker without adding water.

  • Cooking time 6 hours. But the roll was ready in 4 hours. Boiled very well, soft at all. Leave the roll in a saucepan until it cools completely.
  • A large amount of fat has leaked out.
  • I put it in a bag and put it in the refrigerator until it cools completely.

Note

Bottom Line: Rolls can be slow cooked without adding water.

Sooooo tender, my pork was young, so I could have cooked less (I will take it into account next time).

A very successful idea with soaking in brine, the meat was from a private trader, fresh, released quite a lot of blood in a day and the pork turned out to be the most tender, aromatic, especially when cold.
