Monkey bread (oven)

Ingredients

Gravy:
Chopped, green onions 3 tbsp. l.
Parsley (or your favorite herbs) 3 tbsp. l.
Dry garlic 1 1/2 tsp
Salt 1/4 tsp
Butter 5 tbsp. l.
Parmesan cheese 1/2 cup
Dough:
Dry active yeast 1 sachet (7 grams)
Warm water 1 cup
Sugar 1 tsp
Salt 1 tsp
Flour 2 2/3 cups

Cooking method

  • cup-250 ml
  • 1. "dough" mode. Divide the finished dough into balls the size of a walnut.
  • 2. Dip each "nut" in a mixture of refilled butter mixed with onions, garlic and parsley, as well as salt.
  • 3. Put the first layer of balls into a muffin tin or any other form with a pipe. Sprinkle with cheese, then put the balls again and so on until the end.
  • 4. Cover the form. The product should double in volume. This takes approximately 45 minutes.
  • 5. Bake in an oven preheated to 350F (175C) for 30 minutes until golden brown.

Note

Supa's cooking recipe. I did everything exactly according to the recipe.
The recipe is very accurate, no changes required.
I just took a bad shape, and with my old oven, jokes are bad. She twisted the bread from top to bottom to the "fire", and as a result it fell apart into separate balls. But in this form it is more convenient to grab! My husband and I together ate half at once, we could not stop.
The next day I come home from work, and there is one orphan ball on the plate - my husband probably left me so that the plate would not be washed!

Sеrn, and here I caught up with you, and brought another "monkey".

Carina Cooking Recipe. My journey into the world of "monkey bread" began with him.

MONKEY BREAD WITH GARLIC AND GREENS
DOUGH

- 2 large eggs
- 2 tablespoons of vegetable oil
- 500 ml warm water
- 10 g dry yeast
- 1- 2 finely chopped cloves of garlic
- 1 liter 250 ml flour (5 cups of 250 ml)
- 60 ml sugar

AROMATIC OIL

- 180 ml melted butter
- 3 cloves of garlic
- 2 tablespoons chopped parsley
- 2 teaspoons of chopped herbs (basil, thyme, rosemary, etc.)

- Heat the oven to 190 C
- Grease a tall muffin tin (23 cm)
- Dilute the yeast in a small amount of warm water
- Beat eggs with water and sugar
- Mix flour with garlic, and gradually sifting into water, knead an elastic dough, adding vegetable oil at the end
- Put the dough in a greased bowl, cover with plastic foil and leave in a warm place for 1 hour.
- Divide the dough into 2 parts
- Divide each part into 12 parts, roll into small balls ..
- Mix butter with herbs
- Dip each ball in butter and place in the idin mold on top of the other
- Cover the form and leave to rise for another 30 minutes
- Bake for 35-40 minutes .. until golden brown .. cool the bread slightly in the form and then remove
CLOSING WORD ....

I wrote above .. that in my opinion this amount of ingredients will be enough for the Giant norm of bread ..
I make from 1/3 .. and bake in a high form a jle cake for 1.5 liters .. and then the bread "creeps" out of the mold .. huh.gif

I did many modifications ... The last one was ... adding dry parsley with garlic to the oil ..very tasty .. but (in the photo you can see) .. the bread is slightly "speckled" ... huh.gif

I don’t like bread with balls .. I don’t know why (or maybe I already ate balls in due time) .. I make pieces, either square or triangular ..
Butter has long been replaced by vegetable oil .. when the bread cools I don’t like the consistency of frozen butter ..

Beat the yolks and whites separately ... T. I beat the yolk with water .. and the whites into a foam .. then the bread will get more airy .. And it is better to take flour with a low percentage of protein

I used Golden syrup instead of sugar
My top fries very quickly (you can see it in the photo) .. but this is "the nature of my oven" .. so I cover the bread with foil after 10-15 minutes of baking ..

I did it once without eggs at all ... I personally .. liked it much more .. but I don't like eggs in yeast dough at all .. they make the consistency of rubber huh.gif

Htesto was kneaded by a bread maker, added whipped whites after 3 - 5 minutes of kneading

Herbs, I would recommend .. to take dry .. t to fresh .. in the baking process they will lose their color and will look like "roasted cockroaches" ..
But the finished bread can be greased again with salted butter, but this time with fresh herbs with garlic and black pepper

The most important thing is to take a deep shape .. the bread rises very much .. and if it "crawls" over the edge .. it will not have a very presentable appearance ...
The form must be filled in by a maximum of 3/4 .. or better by 2/3

Stern, thank you very much for the recipe!
Yesterday I baked it, the smells were ... And although my husband had already had dinner, half of the bread was gone in a few minutes! He ate and said: some kind of monkey bread, grandmother baked the same in childhood and he was called "pampushki". The technology is different, but the associations are similar.
Great recipe and perfect serving. Prepares and eats quickly.
Thank you.

Sеrn, as I already mentioned, I baked such bread from the dough according to your recipe ("Imperial buns"), and the aromatic butter from the above recipe (only with the replacement of butter for vegetable oil) turned out sooo tasty. Maybe someone will read it and try it too (and he will definitely like it too).

Thanks for the report!

And I continue to "monkey"!
Made the dough according to the recipe for Kaiser buns. Still, in the "Imperial" oil is enough, and even the impregnation is fatty.
I was very pleased.

And today I baked according to the first recipe, while I was cooling down, my son died exactly half, so it was easy to pull out of the mold (with for a cake with a hole ... the autumn turned out beautifully)

just cooled down .... a couple of pieces are still there, I didn't even have time to cook the soup for it, and so they ate it

I'm afraid to do it often, the second wave of overeating with bread will begin (the first is at the beginning of buying a stove)))

Oh, girls, and I did something "monkey" today ... I'm telling you. Yesterday I made fried pies, and as a result, a decent amount of filling remained, well, I like to make more fillings than is required (just in case, but there are different cases). And today, I had a planned "monkey bread", so without hesitation, I stuffed balls (blanks for bread) with a potato filling, and then, as usual (rolled them in fragrant oil and put them in a chaotic manner in a bucket x /P). Oh, what happened ... The handsome "monkey" slightly outgrew the bucket, the smell was on the entire 64 square meters. meter, daughter said that we hadn't had this yet ... (she meant - so tasty)
Z. Y. The dough was made according to the recipe for Kaiser buns (from Stern), but the filling ... that's a matter of taste (as I mentioned above, I had a potato with fried onions).By the way, the "monkey" in x / n, it turns out just an amazing crust, like fried pies ... here.
Stern
Tiny, well, you are tearing your soles on the move !!!
Soooooo, I started to think that it would be nice to stuff the filling into the balls, and you're already right there with the finished masterpiece!
And a question. Before turning on the "baking" did you let the bread rise?

And a question. Before turning on the "baking" did you let the bread rise?
Sеrn, before baking, I stood it for exactly 1 hour (I wanted about 30 minutes, but did not have time to return in time), during which time the bread rose by about 3/4 of the bucket. I turned on the baking in full (I have 1 hour 10 minutes) - it turned out just right.

Repeated "Monkey" on the advice of Stern, dough according to the recipe for "Kaiser" buns.
Again, the same result: the people swoop in and sweep EVERYTHING EVERYTHING, to the last crumb, and another question - and where else?
Stеrn is right, there is a lot of oil in the Imperial ones, and the Kaiser is just right.

Today I got "monkey-faced" again. I baked (this time in the oven) a cross between a "monkey" with a "chamomile" and a cake "Miracle" (my grandmother called it that way, maybe there are other names) ... Result-. The pie has already been cured (three of my eaters had enough to have breakfast exactly). The pictures really remained, but the quality is not so hot, so I don't post it. But it turned out beautifully ... And how delicious it is (my husband prompts).

Stеrn, honey, I'm so ashamed of the quality of the photos, but I can't help but satisfy your curiosity, so I'm inserting what I have, don't blame me ...
Now, a little about what I meant when I spoke about the mixture of pies ... So ... My grandmother called the "Miracle" pie a pie consisting of several pies with different fillings. I did it: with small sausages, with a boiled hard-boiled egg + green onions, with potatoes + fried onions. I put them in an ordinary one-piece shape (like "chamomile", only they did not fit in a circle, so I laid them according to the principle "if only they could fit"), but before putting them into a mold, I "bathed" them in fragrant oil ( left from the previous "monkey"). As a result of the above-described body movements, I got "3 in 1". The finished pie was very easily disassembled into individual pies, the most interesting thing is that when you break off another pie, you don't know with what filling you will get this time ... And here's another ... before forming the pie, I roll out the dough so thinly, as far as possible, then I put the filling, and fill it with a tight roll, not forgetting to bend the edges of the dough inward, then pinch the pie, as usual, and put it on the proofer. Granny also taught me this method of molding, but as a result of not so complicated manipulations, the finished pie turns out to be layered (not to be confused with the layered one).
P.S. The other day I found (on my own head) a missing notebook with grandmother's recipes, and what is there only ... and pies, and Easter cakes ... dear mother ... when is it then to bring them all to life?
Margot
Thank you very much for such a wonderful site !!! The stove was presented to me by my husband on March 8, since then we have only been doing what we bake and all thanks to this site!

Tiny, I illustrate my "thank you" for the monkey pies in HP!
I baked the pizza, and wrapped the sausage halves in the remaining dough. Since the oven was busy, I decided to bake sausages in dough in HP. I ran each pie in vegetable oil and stacked it in a bucket. Each layer was sprinkled with paprika and dry garlic pizza seasoning. Gave the distance 40 minutes in the "heating" mode and turned on the baking. This miracle was baked in 30 minutes and then it sorted out perfectly into pies.
I had doubts that this structure would not rise, after all, the sausages are quite heavy filling. But everything went up perfectly.

Stеrn, - the look is simple !!! (y) In general, you can experiment endlessly with this recipe (IMHO), the other day I baked "monkey" for my nephews, consisting of small round buns stuffed with dried fruits (I put dried apricots, prunes, pitted dates, raisins into each bun a large one (I forgot the name of the variety), then she rolled each bun in orange oil, and rolled it in cane sugar (crystal).

"Monkey" is contagious, right? The dough according to the recipe for sour cream bread, made small pies with green onions and an egg, dipped in butter and randomly folded into a bucket. Vkuuusnoooo .... On the second day (I spent the night with bread in the refrigerator) I didn't want to divide into pies, cut it into pieces, it turned out to be a funny cut.

Thanks for the idea of such a yummy !!!

Boo Boo
I made in a bread maker according to the recipe for Tender pies. I stuffed dried apricots, prunes, raisins, candied fruit or banana into small balls. Then she dipped it in sunflower oil and rolled it in a mixture of coconut flakes and powdered vanilla sugar. Well, it turned out very, very tasty.
I now know why bread has such a name. Because as soon as you get it out of the bucket, people begin to flock and break off the balls, they get burned but devour, just like monkeys, and what kind of pugs are happy with it. In general, until you bake and see the process of eating, the name is not possible to understand.

BooBoo, in monkey bread, in general, you can put anything that is bad ... I somehow left orange oil (after making buns), so I kneaded the dough without thinking twice, stuffed it with mint caramels, rolled it in orange oil and forth. .. I mean, in the oven ... The children were delighted! The candies melted and it turned out to be liquid caramel, the kids really liked it!

Butterscotch is also great as a filling.

And in general, it's time to start a separate Temka for fillings, then you wouldn't look for a long time.

In my old cookbook, this type of cake is called "mixed", but I like "monkey bread" more.

I make thin rolls with different fillings from butter yeast dough (sugar with cinnamon, nuts, poppy seeds, raisins), cut into pieces, (or balls inside with dried apricots, with nuts, prunes, Nutella shock paste, dip each in plum, butter and I put it vertically in the form.
At one time I did it in a miracle oven (remember there was such a thing?)

Stern, thanks for the recipe. baked it today - it turned out so delicious even in my oven! well my family is not at home, or even would not be allowed to admire ... and now I want to bake some butter and stuff the balls with cherries and apples.
recipe: Products:
30 g fresh yeast, or 1 dry sachet + 1 1/2 tsp., Or 3 tbsp. l. yeast "Shimrit"
1/4 cup warm water
3 tbsp. l. Sahara
1 glass of hot milk
200 g butter
1 tsp salt (no slide)
4 - 5 cups white flour *
3 eggs, beaten

Deep kugelof shape, oiled

1. Dissolve yeast in warm water, add sugar and stir.In a large bowl, add half a serving of butter, salt and milk. Cool down.

2. In a bowl with milk and butter, add the yeast mixture and sifted flour (2 cups). Add eggs and beat until smooth. Gradually add the remaining flour until a soft but not sticky dough is formed. Transfer it to a floured surface and knead for about 8-10 minutes into a smooth and elastic dough. Form into a ball, transfer to a greased bowl and roll around until the ball is completely oiled. Cover with a damp cloth and heat for about an hour (the dough should double in volume).

3. Knead the dough and divide into two parts. Melt the second part of the butter and allow to cool. Roll each part of the dough into a layer about 7 mm thick and cut into diamonds with a side of about 7 cm.

4. Dip the lozenges in the melted butter and place them overlapping in a greased mold. Drizzle with the remaining oil. Cover the baking dish with a damp towel and proof it again until the dough expands again.

5. 15 minutes before baking, heat the oven to 190 degrees and send the form with the dough there for 45 minutes.
Hold the finished bread in the form for 5 minutes.

To remove the bread from the pan, gently tip it over onto a large towel. Cover with a flat plate and turn over again.
the dough rises very well, I mixed everything and put it in the bread maker.

Today I baked bread with an interesting name. I doubted for a long time about opening a new topic (I am a beginner baker and a photographer too!), But the bread turned out to be delicious with a delicate creamy taste and a layered structure. Recipe from the Cook-Talk forum.

Recipe:
3 cups flour
2 tbsp. l. gluten (optional)
3 tbsp. l. honey
1 tbsp. l. vegetable oil
30 + 70 grams of butter
1.5 tsp salt
1 tbsp. l. yeast
200 ml of milk (milk + eggs should be about 320 ml of liquid)
2 large eggs

Preparation:
Put all the ingredients, except 70 grams of butter, in a bread maker and put the dough on the mode. At the end of the program (about 1.5 hours) the dough should rise well. Divide it into 2 parts, roll each part about
1 cm and cut into random pieces with a side of about 3-5 cm. Melt the remaining 70 grams of butter, dip each piece of dough in butter and put back in the bread maker. Leave to rise for 1 hour and then bake.

My comments:
I chose the Special program (at LG this is a program for breads that are high in fat, sugar and eggs) Medium crust.
I didn’t add gluten because I don’t have it yet, I added 3 tbsp when mixing. tablespoons of flour. And put the yeast 1.5 tsp. After kneading and raising the dough (1 hour 30 minutes), I turned off the oven, took out the dough and see the recipe.
Only the pieces of dough I greased with oil, and not dipped, respectively, less than 70 grams of oil for coating took.
After placing the dough, I turned on the oven and it worked further (lifting and baking).

I liked what happened. Hope someone else will like it.
This bread is not cut, but pieces are broken off. I broke it not quite right (all at once), I just wanted to show its delicate layered structure.

I really liked the idea of monkey bread - the same pies, but much faster and easier. Did it twice already. The dough was sour cream, and the fillings were rice with eggs and onions, sausages and cottage cheese. The dough (250 grams of flour) made bread = 10 pies - enough for my family for breakfast and dinner. Now I want to make a sweet version, and my husband asks for pies with cabbage.
I am sure this "pie bread" will be a frequent guest on our table.

Yeah, to the right - with cabbage, to the left - sweet, and everyone is happy)))
in principle, it is possible. I always mix one dough (not sweet, but also not very salty), and I make pies with both sweet and savory fillings. ))))

My art today on the theme of "Monkey Bread":

And this is at the fault:

The balls were stuffed with almonds and dark "Jumbo" raisins, rolled in a mixture of sugar and cinnamon.

Krosh, CLASS !!
Every bite is visible, toss each bite in cinnamon and sugar is a great idea! And it was baked so wonderful!
I had bad experience using cinnamon in a dough. I took no more risks, but looking at this art, I want to repeat it.
Do the pieces come off? Can they be broken off?
Crochet

gorgo6a, the pieces separate very well! The main thing is to roll them better in a sugar-cinnamon mixture. My home-made breads of this kind like to disassemble them into separate balls, rather than cut them off with a knife, like ordinary bread (they believe that when cutting into slices, the charm of the "Monkey bread" is lost).
Girls, below is the recipe for the dough, which was used to make this bread:

DOUGH:
2/3 st. l. dry yeast
400 gr. flour
0.5 tsp salt
40 ml butter (you can vegetable, you can melt butter)
80 ml condensed milk
2 tbsp granulated sugar
1/3 cup raisins
200 ml of water

SPREADING: 1/4 cup granulated sugar + 1/4 cup ground cinnamon

The sprinkling can be made less, I still have one (or two) bread.

We continue to monkey ...

ORANGE GROVE.

Conversion for HP on 400 grams of flour:

Dry yeast - 1.5 tsp (I took Saf-moment for baking. They are already with vanilla)
Millet flour. - 400 grams
Oil drain. - 40 grams
Orange zest - 1 tbsp l. (zest from one orange on a fine grater)
Powdered milk - 2 tbsp. l.
Sugar - 3 tbsp. l.
Salt - 2/3 tsp
Water - 240 ml (took baked milk)

Dough mode: two hours and 20 minutes. Get it. Form into balls, and pour them in orange glaze.
Glaze:
80 grams of softened oil drain + 2 tbsp. l. orange peel + 0.5 cups of sugar.

Put the rolled balls tightly into the HP bucket (remove the spatula). Leave the program off for 1 hour. Using the timer button, put on Baking for 1 hour.

PS I pressed several pieces of candied orange into each ball.

Delight !!! The smell is indescribable, orange and vanilla, even when I was checking the bun - drooling. And it is very comfortable that the bread should not be cut, but broken off. The whole family drank tea with aromatic buns very sincerely. Thanks again! I will bake again and again (death to the figure).

according to the principle of ORANGE GROVE, I probably baked an APPLE GROVE. I used an apple instead of an orange. I added lemon zest to the dough (there were just leftovers of lemon at home. And the mixture in which I rolled dough lumps, -80 g of margarine + 0.5 tbsp of sugar + 0.5 tsp of cinnamon and 1 grated apple. And I added raisins. The guests ate, they appreciated it. This pie in my house will be permanent, I don't attach a photo, I ate it quickly. I think that depending on the season, you can use any fruit - cherries, apricots, plums.

I don’t hang photos, there are already many different ones here. the balls were sculpted together with a 4-year-old daughter, she especially liked the process and the result.

I made such bread, though without filling. I sculpted round pieces and put bread makers in a bucket. The dough was awesome buttery from Sweet. When it was gone, I put out baking for 50 minutes. In principle, baking bread starting with a quick 35 min and a basic 50 min, I think you can put it within these limits. Thank you all. Star for the idea, Sweet for the dough.

I baked Monkey's bread today in KhP, stuffing Kaiser dough buns with rice, onions and spices. I dipped each bun in fragrant vegetable oil. When I laid out the first row, it seemed to me that the buns were just floating in oil. I dipped the rest of the buns only halfway, but still it seemed to me that the butter was too much. I liked the finished bread very much, only the sides are harsh and fatty in my opinion. Is this how it should be or did I do something wrong?
Stern
Summer resident , try next time not to dip the pies in butter, but to grease them with a brush. I do this - dip it in oil on one side, and then spread the oil with a brush over the entire surface of the ball.
