Black beer bread with bran

Ingredients

Coarse flour (Belovodye) 2 2/3 cups
minus 2 tbsp. l.
Rye flour 3/4 cup
minus 2 tbsp. l.
Beer dark 1/2 cup
Strong tea leaves 1/2 cup
Salt 1 1/2 tsp
Sugar (fructose, honey) 1 tbsp. l.
Oil (mustard) 1 tbsp. l.
Dry yeast 1 tsp
Wheat germ flakes
(if not - can be replaced with bran)
1 tbsp. l.
Malt 2 tbsp. l.
Agram 2 tsp
Panifarin 2 tbsp. l.
(5 tsp can be)
Ground coriander 2 tbsp. l.
Optionally:
kefir, buttermilk, ayran,
natural yoghurt
or baked milk
(I tried all the options,
each delicious in its own way)

Cooking method

  • I took as a basis the recipe posted here as a variation of Danish beer from Panasonic. In it, white flour was replaced with coarse flour, I replaced the water with half of strong black tea and half of kefir (somehow I had ayran, it is salty, so I reduced the salt by a third), I also replaced 2 tablespoons of rye flour with rye flakes , 2 tablespoons of coarse grinding - on the bran and added 1 tbsp. l. germ flakes of wheat. Added 3 tbsp. l. malt, 2 tsp. agram and 2 tbsp. l. panifarin. On top, before baking, I smeared with kefir and sprinkled with the Fitness mixture - there are various seeds, rolled oats and something else.
  • Before baking, grease with milk or kefir, sprinkle with flakes or seeds.
  • It is necessary to monitor the kneading, the dough should be wet and sticky, but gather in a bun with a scallop on the side - if thinner - add a little flour.

Cooking program:

Mode: rye bread.

though I put 1 tbsp of malt. spoon and coriander 0.5 tbsp. spoons. and kneaded the dough on the whey.

The first time I brewed 2 tbsp. l. malt and it seemed to me that too much black bread. So I decided to halve the amount of malt.
From this bread, I just trudge.

Yesterday I cooked, however, scraped together a bit of whole grain, a bit spelled and ordinary wheat. By the way, the bread turned out quite light.
