Instant yeast 1.5 tsp.
Sugar 2 tbsp. l.
Salt 1 tsp
Kefir 250 ml
Chicken egg 1 PC.
Water up to 320 ml
Sunflower oil 2 tbsp. l.

  • The order of the bookmark is the one adopted by Panasonic - first dry, then wet. That is, yeast, sugar and salt scattered in the corners of the form, sifted flour and semolina were weighed with the accuracy that a dial kitchen scale can achieve, two tablespoons of bran were taken, namely tablespoons and with a solid slide. These three products of processing wheat grains covered the bottom and spatula of the form of a bread machine with an air blanket.
  • The egg was beaten in a bowl with a fork, not into a foam, but simply beaten. A glass (250 ml) of kefir was added to it, and the whipping process was repeated. Since I had not yet learned how to accurately measure 320 ml in a bowl, I had to carefully pour the kefir-egg mixture into a measuring cup - it turned out 280 ml. But I did not immediately add water, first I poured the mixture into the mold, and rinsed the measuring cup and bowl with the necessary 40 ml of water - do not waste the good, and refilled it into the mold. The last to leave the mold were 2 tablespoons of sunflower oil.
  • Program - basic, size - L, crust - medium, "Start!" And 4 tiresome hours of waiting began ...
  • As older comrades taught - watch the kolobok. After the first kneading, the bun was a little soft, and the hand reached for the bag of flour, but the fishing experience reminded that the bran absorbs moisture well, although not immediately. After the second or third kneading, the kolobok acquired that warmth, softness and elasticity that is so familiar and pleasant to the palms of every real man. And now all that remained was to wait for the inviting squeak of the bread machine.

The bread turned out to be simply wonderful - with a good balanced taste, with a porous crumb with a light "rubber band" and a crispy but tender crust.

Your right to add more bran But it should be borne in mind that a lot of bran (up to 50 grams) will make the crumb of bread gray, dark, and crumbly, dry - you also need to guess with bran, go for it!
