Ingredients

Applesauce 600g
Agar agar 2 people
Protein 2 pcs
Sugar 450g
Citric acid 1/2 tsp
Water 200ml

Cooking method

  • Good apple harvest this year. In order that not a single apple was lost, I offer you this recipe:
  • - From apples, in a blender, we make mashed potatoes. We need ready-made puree. Unload it into a saucepan and boil for 5 minutes. Then set it aside - let it cool.
  • - In a bowl, beat 2 squirrels + 150 g sugar + 1/2 tsp. citric acid in highly thick foam.
  • - We put a saucepan on the fire, where we pour the remaining sugar (300 g) + 2 tsp. agar-agar and fill it with water (1 glass). Boil the syrup until "test on a hard ball" (or when we see a lot of boiling small bubbles)
  • - Then, whisking the protein mass, add the applesauce to it and when the mass becomes the same color, pour in the boiling syrup in a thin stream, continuing to beat. Beat well and mix, pour into molds and put in the refrigerator to cool.
  • As soon as the mass has cooled and hardened, it can be cut into pieces and sprinkled with powdered sugar. Delicious marshmallow is ready

I report the results: my candy did not want to freeze, it is understandable, I had twice the norm of applesauce, and quittin (1 pack) does not seem to be very suitable for these purposes, BUT ......... ... this is an excellent dessert, which we put in portions in the appropriate container and taste, it is very tasty, for guests at the end of the feast it is just a song !!! Now I realized that I had to put 2 packs of quittin, well, we will try, since the apples are still hanging on the trees.

The whites whipped up, slowly added the applesauce. Whipped up, became one color. The mass took up almost the entire bowl of my "Boshik" and I began to have doubts about where else the syrup would fit.
And the vile syrup is still boiling and does not want to collect any ball in the water.
It's time to add agar. I have written on a 10-gram agar bag that this amount is calculated for 500 ml of liquid. Without thinking twice, I poured 2 sachets into the syrup. It's a pity, or what ?!
My syrup was already draining from the spoon with great difficulty, but it was not going into the ball.
Tired of it!
Since I was afraid that my protein-apple mass would settle from too long beating, I poured in the syrup. The mass has already risen above the level of the whipping bowl.
I stopped whipping and dumped the mixture into silicone molds.
Naturally, she licked the spoon. It turned out very tasty, with a pleasant sourness.
I will show the final result when the marshmallow hardens.
But for myself, I clearly understood that:
1. You need to start the process of making marshmallows by boiling the syrup, and then prepare the apples, etc.
2. It turned out a lot, next time I will make half a portion and not only from apples, I will add some more fruits.
I put it in the refrigerator, it was almost frozen (it took about an hour).
