Orange cakes
Ingredients:
Biscuit
Butter 100 g
Vanilla sugar 8 g
Sugar 120 g
A pinch of salt
Eggs (yolk) 4 pcs.
Orange (juice and grated zest) 2 pcs.
Eggs (protein) 3 pcs.
Flour 90 g
Potato starch 30 g
Almond flour 100 g
Interlayer
Orange jam 200 g
Fudge
Powdered sugar 200 g
Orange juice 4 tbsp. l.
Orange liqueur 2 tbsp. l.
Cooking method

Beat butter with half the sugar, vanilla sugar and salt and gradually stir in the yolks, orange juice and zest. Beat the whites with the second half of the sugar into a strong foam and combine with the yolk mass. Add flour, starch and almonds and mix gently.

Pour the dough onto a baking sheet and bake in an oven preheated to 200 ° C for about 10 minutes. Allow the biscuit to cool for at least 2 hours.

Then, if the height of the baked biscuit allows, cut the biscuit across, or just in half. Spread one layer with orange jam and cover with the second layer.

Mix the powdered sugar with orange juice and liqueur and cover the top layer with this fondant.

PS What we have at the end ... Delicate sponge cake and amazing orange aroma complemented by a delicious aftertaste of orange liqueur.
