The ratio of the weight of the finished bread and the amount of flour

On the forum, questions are often asked how much flour should be put in order to get M - small, L - medium or XL - great bread.

(M) Small, ordinary loaf - up to 400 grams of flour small loaf,
ORDINARY bun - 400 grams of flour
(L) Large loaf - 500 grams of flour,
(XL) A very large loaf - 600 grams of flour.

Button "weight of finished bread" regulates the baking time of bread in the bread maker.

In practice, according to the actual output of finished bread, the calculated weight (output of finished bread) does not coincide with the weight that you get after removing the bread from the bread machine.
For example, 450 grams of bread can actually weigh about 500 grams.

The weight of the finished bread is always greater than the weight of the flour used to make it.

The weight of bread, obtained from 100 kg of flour and the total amount of auxiliary raw materials (water, salt, sugar, butter, yeast and other additives of products), added per 100 kg of flour, is called the bread yield.

The amount of bread yield depends on the moisture content of the flour, its quality, bread moisture, dough recipes and other reasons.

For wheat bread, the yield is 130 - 150% (by weight of flour).


I give below table of the ratio of the weight of flour and dough and the yield of finished bread, at the rate of 150% for wheat bread.

By setting the button "weight of finished bread" regulating the time of baking bread in the bread maker, choose a close ratio of the weight of flour and the weight of finished bread according to the table and the available indicator in the program for your bread machine.

For example, the weight of flour is 250 grams, the weight of the finished bread is 400 grams - which means we select the button "weight of finished bread" on the display of the bread machine 450 grams.
