Chiabata
Category: Yeast bread
Ingredients
White italian
or French zero flour 300 g
Water 200 ml
Sugar 1 tbsp. l.
Olive oil 1 tbsp l.
Dry yeast 2.5 tsp
Cooking method

I bake like this:
All in a bucket of bread maker. We put the program on the dough (about 1 hour) (like on a pizza) and then on the rapid bread (about 2 hours). The dough should be slightly thinner than usual.

You can add fried onions, it turns out delicious.

Cooking program: (dough + quick program)
Note
Certainly not a perfect ciabatta, but not bad at all.

And if everything is done by hand at first, then why not bake in the oven later? Here in the oven I get a wonderful ciabatta.

Please share the recipe.

I don't mind baking in the oven at all, I would have done it a long time ago, only I don't have an oven and I really want a real ciabat

Alas, as far as I know, there is no such temperature in a bread maker that is needed for a ciabatta.

IMHO-Ciabatta cannot be baked in a bread machine. When baking it, a special regime is needed - first, a high temperature of 240 grams. With a short time, then -220 ° C until cooked. Therefore, they bake in the oven.
But maybe someone else will tell you something.

Perhaps this has already been discussed somewhere, but I did not find it. I have an oven with gas control, it is simply not possible to reduce the heat in it without first cooling the oven to a lower temperature (otherwise the protection system simply shuts off the gas). I run into this problem every time a recipe suggests reducing the temperature during baking. 20 degrees is not scary yet, but from 250 to 180 is practically unrealistic (such recipes came across). Can anyone know how to proceed?

Do I have a recipe for Moulinex? where the ciabatta is baked directly in the HP.

water 180ml
salt 1 tsp
psh. flour 250 gr
dry yeast 1 tsp
The "Italian bread" mode and that's it. The picture is very beautiful.

I baked a ciabatta in HP, you can watch HERE ... In the opinion of my family, it turned out, of course, very tasty, but ... it's not quite that ciabatta ... or rather not ciabatta at all ... both the structure and the taste are more consistent with the cake, bun, or whatever, but not ciabatta (IMHO).
