Ingredients

onion 1 medium
carrot 1 medium
celery 2
garlic 1-2 slices
potato to your taste
white beans (canned) 1 can
green beans (frozen) to your taste
green peas (frozen) to your taste
corn (frozen) to your taste
tomato juice 1 liter
tomato 2-3 pcs

Cooking method

  • For Saturday and Sunday we make 2-3 tablespoons of sunflower oil, for the rest of the days on the water.
  • Heat oil / water in a saucepan, saute finely chopped onions, carrots and celery until onions are translucent, add finely chopped garlic.
  • Peel the tomatoes (make a cross cut on the tomato and dip it in boiling water for 10 seconds), blender until puree and add to the pan over low heat. After 10-15 minutes, add the potatoes (if you don't like potatoes, you can do without them altogether), washed beans, 1 liter of juice. Salt to taste
  • 5-7 minutes before the potatoes are ready, and the soup itself, add water to the required amount of soup (I usually have 4 liters per saucepan), bring to a boil and add frozen vegetables. In the summer we replace everything with fresh zucchini, zucchini, peppers, but now I use ice cream. Vegetables can be added whatever you like (you can just take the ready-made bonduelle "minestrone mix") and in the amount in which you want to get the soup. My husband loves thick, so I add a lot of vegetables.
  • Sprinkle the prepared soup with herbs.
