Ingredients

smoked turkey ribs 2 strips
medium onion 1 PC.
garlic 2-3 cloves
dwarf or ordinary carrots 10 (1-2pcs.)
cauliflower 5 heads of cabbage
celery 2-3 stems
green beans (asparagus) 1/2 cup
broccoli 1 PC.
mushrooms 5 pieces.
potatoes 1-2 pcs.
beans 1/3 cup
pasta 1/3 cup

Cooking method

  • Separately, I cooked broth from smoked turkey ribs and beans, previously soaked overnight.
  • In general, any seasonal vegetables are taken. Cut into cubes. First, onion and garlic are fried. I add dwarf carrots, fry, and then also fried: cauliflower, celery, green beans, broccoli, potatoes, mushrooms.
  • Combine vegetables with broth and beans, add spices and cook over low heat. When everything is ready, add pasta or rice. Minestrone should be thick, thicker than borscht. Add greens at the end.
  • You can make pesto and put it in the minestrone, but I got such a complete taste that I didn't do it.

Time for preparing:

Previously, minestrone was cooked for 5-6 hours, it was a sacred rite. Now it can be cooked in 2-3 hours. You can cook winter or summer, with or without meat, with various additives, in general, to your taste.
