Egg and omelette pancakes.

Ingredients

Eggs - 4 pieces
Cream - 1 tbsp. l
Sour cream - 1 tbsp. l
Mayonnaise - 1 tbsp l
Greens: dill, parsley, green onions.
Spices: salt, pepper, coriander.

Cooking method

  • Separate the yolks from the proteins, mix the yolks with mayonnaise, sour cream, cream, spices, herbs. Beat the proteins with a mixer almost in meringue, but not quite so that the texture is less dense, add salt to the proteins,
  • Heat the frying pan, pour in the olive oil .. put 2 tbsp. l proteins, and cover the yolk mixture on top to the center with a lid, when the crust is browned, turn over and fry until tender. The pancakes that are nearby are baked in the same way .. only the proteins do not foam up + I sometimes make them with filling - Filling cherry tomatoes, cheese, or curd cheese.
