Note

Brine - I salt cucumbers in very good water - we have delicious water in our village; per liter of water -1 tbsp. l. salt; spices - garlic, horseradish leaves, currants, cherries, oak; spicy greens - tarragon, hyssop, dill. Sometimes mustard seeds. Pour the cucumbers with brine - and into the cellar. Without false modesty - cucumbers - mortality!

You can both cabbage pickle and tomato pickle - provided that fermentation has occurred naturally; without vinegar.

May @, Maina, the water is exceptionally cold, and the cover is dense polyethylene, which is put on only when it is lowered into hot water.

if there is a cellar and good water, the cucumbers are properly grown - a variety for pickling and without a lethal amount of nitrates, then excellent pickled cucumbers are obtained.
