Ingredients

Leaven 130 g
Water 200 g
Wheat flour 200 g + 100 g
Potatoes 5 pieces
Carrot 2 pcs
Bulb onions 2 pcs
Vegetable oil 2-3 st. l.
Salt 1.5 tsp
Soda 1 tsp

Cooking method

  • Sourdough, at its peak, mix with warm water, add flour 200 g, knead the dough, leave to rise at room temperature. Cut the onion into cubes, fry in vegetable oil. Grate the carrots, add to the onion, fry until tender. Grind the raw potatoes, mix with the dough that has risen 2 times, add more flour, if the potatoes gave a lot of water, we achieve the consistency of the pancake dough. Finally, add the carrot and onion frying and salt.
  • You can add spices to taste (I added an Italian mixture)
  • We extinguish the soda just before planting in the oven. We bake at 180-200 degrees for 45-50 minutes.

Note

Initially I wanted to make sourdough potato pancakes. Then I decided to roll in a new silicone mold and baked everything in one large cupcake in the oven. I greased the form with butter and sprinkled with semolina (I wanted breadcrumbs, but they were not there)
The leaven already gave a strong sourness, therefore, it quenched the acid with soda.

Rose in the oven 1.5 times.
To the touch, it resembles charlotte, on the outside there is a fried thin crust, on the inside there is a very soft porous juicy crumb. It smells like cooked potatoes. Sourdough potato bread (lean)

Weighed my "average" potatoes, carrots, onions:
Unpeeled raw potatoes according to the recipe 700-750 gr
Onions and carrots - 200-250 gr each
