Hummus almost in Russian (La Cucina Italiana multicooker-pressure cooker)

Ingredients

chickpea 250 gr.
sesame 50 gr.
lemon juice (can be replaced with pickle from cucumbers or cabbage) 3 tbsp. l.
Salted mushrooms 100 g
Green olives 2 tbsp. l.
ground spices: coriander, red paprika, cumin or hops-suneli taste
linseed oil 6 tbsp. l.

Cooking method

  • We soak the peas for a day, periodically changing the water - we do not add baking soda! Then put in a multi saucepan, fill in only cold water, and put on the "beans" - this is 30 minutes with the valve closed. When it squeaks at the end, discard, and again on the beans - 30 minutes.
  • We open it and take it out after a complete release of pressure in the multi.
  • The result was impressive - very soft, but not overcooked.
  • Cool, add salted mushrooms, toasted sesame seeds, olives, spices, broth Hummus almost in Russian (La Cucina Italiana multicooker-pressure cooker)
  • grind with a blender until puree; add spices and, if necessary, dilute with broth.
  • Hummus almost in Russian (La Cucina Italiana multicooker-pressure cooker)
  • It is better to buy chickpeas in Moscow in the markets, in stores there is a risk of running into stale goods, and it is much cheaper, almost twice.

Note

Chickpeas are a good source of lecithin, riboflavin (vitamin B2), thiamine (vitamin B1), nicotinic and pantothenic acids, and choline. The protein content of chickpea seeds varies from 20.1 to 32.4%. Chickpea seeds are high in phosphorus, calcium, potassium, and magnesium. The content of vitamin C in chickpea seeds varies from 2.2 to 20 mg per 100 g of biomass, while in germinating seeds its content rapidly increases to 147.6 mg per 100 g of dry matter. Depending on the variety, the fat content in seeds ranges from 4.1 to 7.2%, and in this indicator, chickpeas are superior to other legumes, except for soybeans.
Although soybeans, peas and beans contain more protein in seeds, it is known that the nutritional value of a crop is determined not only by the amount of protein, but also by its quality, which depends on the balance of its amino acid composition, the content of essential amino acids, and protein digestibility. According to these indicators, as well as the amount of the main essential acids - methionine and tryptophan, chickpeas are superior to other legumes
Chickpea beans eaten (like chickpea flour in the form of an ointment) improve skin condition and complexion.

Chickpeas are high in potassium and calcium, so eating them has beneficial effects on bone health, muscle health, heart function, dental health and tissue water content. It is also useful for the thyroid gland with a lack of iodine in the body, and the presence of selenium in its beans helps to prevent various neoplasms (including cancerous ones).

Very healthy beans! Quite a vegetarian dish!!

In the countries of the East, it is believed that chickpeas enhances lust (potency), therefore, male domestic animals (especially camels) are fed with chickpeas. Chickpea infusion, drunk on an empty stomach, causes a strong erection.
Well, as if not a lean dish ... ... Feed your husband chickpeas, and then what to do?

Thanks for the recipe! And what is your multicooker, that there is a "beans" function.

I had it written that this is the La Cucina Italiana multicooker-pressure cooker; Why did they change it is not a question for me.
sweetka
why don't we use soda in this case?

Svetik, why should we change the water frequently? It's another matter, somewhere in the Middle East - it's hot there, a day of soaking without baking soda can end in failure - peas will sour!
sweetka
I read a recipe where chickpeas are cooked with soda and still could not understand: why these conditions and conventions. but about the fact that it may turn sour from the heat, sales did not think. Thank you !!!
Vilara
With mushrooms! Interesting.
MariV do you recommend linseed oil?

Yes, any that is at hand - the main thing is chickpeas! And with it anything you want - seeds, nuts, mushrooms, olives, pickles, etc.

But does chickpea have any "secrets of suitability"? we have a lot of chickpeas on the market, how to choose?

smaller, grilled, for hummus - the very thing. Here is the last kg taken away by the hope on the market. It's straight with garbage (there are some leaves in it). Subscribe to the topic. Already soaked. current first I will make a normal Jewish, and then the vinaigrette.

Our Slavic grandmothers sell such a smallish, grayish ... in short, some kind of dumb. and the Azerbaijani girls are large and creamy yellow.
but then I thought: what if he is dumb, he is like Cinderella - he looks ugly, but if I become his fairy godmother ...
Or am I driving?

It's not about the color, or rather the color also probably plays a role.
The Israelis write that small varieties of chickpea are more suitable for making hummus, they have thinner and softer husks, hummus turns out to be softer and write that it contains more soluble fiber.

Soda is added during cooking so that the chickpeas are softer, to speed up cooking, and not so that it does not rot

I think there are expiration dates - like any cereal. I took it in the store - it was written that it was from England itself, the English means that he was so firm, obviously, that for a long time he sailed from England through India, China, then camels through Mongolia, probably. And the taste of that ...
And the other day I took it in the market from former friends from the former Soviet - for 8 hours it swelled, even uncooked could be chewed. I bought a small one, great!

Who else wins the palm again - not Jewish, but Near-Central-East Asian!
In general, I found out about this chick from my mother (the wife of the priest, that is, the priest)!
Well, he is delicious, this chickpea, with ordinary peas, in any comparison! Again, if cooked well, there is no flatulence, which is also very significant! And from peas?

For gypsies - what is this coin in the photo - our brand new ten-ruble?
About soda - there are different opinions - one - so as not to turn sour! To make it softer and faster - if good, not stale chickpeas, without soda - boils well!
Vilara
MariV Thank you! I already understood that there is room for creativity

Suslya
Margit But before you throw it into the meat, you also need to soak it?

Now, I’ll walk through the market and see how we are with this. All the same, there is a large Jewish community ... and our mayor is Groisman, not Petrenko
Margit
Yes, Tanyusha, you need to soak any legumes. After thoroughly rinsing, I soak for a couple of hours, then changing the water for another hour.

I read comments about pies, and here's what one wrote that soda creates such an environment that thiamine (vitamin B1) is destroyed in chickpeas so it's better to cook longer without soda, so it's more useful.

Chickpeas can also be fried perfectly - the main thing is to cook it correctly. After cooking, put it in a colander, let the broth drain, and just fry in vegetable oil; even without spices and salt it is very tasty!

I beg your pardon, but there is no need for salt at all? And then for me he is some kind of tasteless ...

I tried to cook chickpeas in a slow cooker (for Nokhutla) - after five and a half hours I could not stand it and turned to a friend he just advised to add soda when cooking, he knows from childhood I would know, I experimented with a pressure cooker, but after almost a day of soaking ... antiquity, to speed up cooking, a handful of ash was poured into the pot ...
