yeast 1 tsp
Rye flour 35 g
wheat flour 220 g
salt 1 tsp
olive oil 1.5 tbsp. l.
serum 160 ml

Cooking method

  • Put the food in the bucket according to your bread machine.
  • Set the mode to the main, medium crust, weight 1 kg.
  • The bread turned out to be delicious, the crust is very crispy, which will please the child. And the holes in the crumb are really big in some places.

Whey is a kind of "water" obtained when milk is acidified (sour milk is overcooked and whey is separated) or when kefir is brought to a boil. The sour is curdled and the whey is separated.

They work fine! Sugar-free dough can be and will be of high quality!
But without salt, the dough will be bad, since salt is necessary for the yeast to work.

I wanted such a bread, but there was no whey in the house, but there is yogurt and brine from olives.The recipe has undergone changes in the sense that with the advent of sourdough, I make all the baked goods on it without using yeast. And so, yeast and rye flour were replaced with the appropriate amount of sourdough, whey - with a mixture of yogurt and brine. I baked in a double dose, the bread turned out to be 14 cm high. It looks very appetizing, but the test tomorrow morning: it cools down. Interested in the question why the original version of the bread is called ciabatta, what is the Italian touch in it? Domestic flour, and even more whey.

I baked such a "lazy girl", deviating a little from the exact ingredients, because I wanted it with cheese).
Lazy ciabatta with cheese:
Dry bakery yeast - 1 tsp.
Rye flour 35 g + 1 tbsp. l. to sprinkle cheese
Wheat flour 240 gr
Salt - 1 tsp
Olive oil - 1.5 tbsp l.
Mozzarella cheese (or any hard) ~ 80 gr.
Water 180 ml + 1 tsp. dry curd whey (or just whey 180 ml)

Cut the cheese into small cubes, roll in 1 tbsp. l. rye flour and add with a dispenser, or at a signal.
Basic program, weight 500 g, medium crust.

The result is a very tasty fragrant airy bread.
