Rice dessert cutlets

Ingredients

Cutlet mass:
Boiled rice (round grain varieties with a high starch content) 550 g
Powdered sugar 30 g
Dried apricots 150 g
Candied orange peel 50 g
Finely chopped almonds 100 g
Dark chocolate 50 g
Nutmeg on the tip of a knife
Strong tea (rum, cognac) 100 ml
Breading:
Flour 2 tbsp. l.
Cold sparkling water 4 tbsp. l.
Almond flakes 150 g

Cooking method

  • Soak dried apricots and candied fruits in tea (rum or cognac) for 1 hour.
  • Crush the chocolate in a mortar into pieces, no more than 3-4 mm.
  • Thoroughly mix the rice with powdered sugar, nutmeg, chopped almonds and chopped chocolate.
  • Squeeze dried fruits, chop finely and mix with rice mass.

  • Wrap the cutting board with cling film.
  • Put the cutlet mass on the foil and compact it tightly into a layer 1.5 - 2 cm thick.
  • Cut the patties with a cookie cutter with a diameter of 4 cm.

  • Make batter from flour and water.

  • Dip cutlets in batter.
  • Then, gently pressing down, roll on all sides in almond flakes.

  • Fry in a preheated pan in odorless butter or vegetable oil.
  • Dry off excess fat on a paper towel.

  • Serve completely cooled.
