Buns "UFO"

UFO buns

Ingredients

wheat flour 200 g
dry yeast 2.8 g
Sahara 36 gr (3 tbsp. L.)
salt 2 gr (1/4 tsp.)
powdered milk 8 g
egg 30 g
butter 30 g
water (milk) 90 g

Cooking method

  • To cover you need:
  • egg 36 gr
  • sugar 50 gr
  • flour 32 gr
  • ground almonds 9 gr
  • melted butter 45 gr

  • I have compressed yeast, and there is no milk powder, so I changed the technology for myself.
  • At the bottom of the bucket, cotton crumbled yeast (4 g), poured sugar, poured warm milk, part of a shaken egg, flour, salt. I switched on the bread maker to the * Yeast dough * mode. After 10 minutes, turned off (unplugged). She took out the dough, stretched it out and symbolically kneaded the softened butter with her fingers. I rolled it into a ball and put it back in the x \ n bucket, connected it to the outlet and she again began to knead the dough, in my bread maker a full batch lasts 20 minutes.
  • While the bread maker is running, you need to prepare the dough to cover the buns.
  • Grind / whisk the rest of the egg, sugar. Then add flour, almonds (if there is, I added vanilla extract instead of almonds), stir everything well. Add melted butter to this mass, stir well again with a whisk and transfer to a pastry bag (I put it in a corner of a regular plastic bag). Tie the top and put in the refrigerator.

  • Take the finished yeast dough out of the cotton, divide into 8 equal parts (about 49-50 gr). Roll each piece into a cake, put the filling in the middle (in the original it is a cherry and some kind of Bob's pasta), I had a vanilla custard. Pinch and shape into a bun. Place the buns on a baking sheet with baking paper, away from each other. Proof in a warm place for 20 minutes. After 20 minutes, take out the baking sheet with the rolls, turn on the oven at 200 degrees, get the dough from the refrigerator to cover the rolls, cut off the end of the bag and thus distribute the dough over the rolls.

Good health, bake for your families

I hope everyone understood that if there is milk powder, then you need to make the dough on water, and if not, then on ordinary milk.

Gypsy, indescribable beauty, thank you !!!

What I wanted to ask - just knead the dough, not ferment? to form-stuff the buns immediately, distance them for 20 minutes, then cover with a dough-coating and bake?
Gypsy
No no, full cycle * yeast dough *, in my oven it is 1 hour 30 minutes Then take out the dough, divide into 8 parts, form the rolls, distance again .. then cover with dough from the bag before baking

Gypsy, girls, please help! I want to bake such buns, but I can't think of a filling, I don't have cherry paste, I don't have any custard ... and the filling, as I understand it, should be quite dense? jam-jam will not work .. what to come up with?

You can mix jam with nuts, you can make a filling of apples and cinnamon .. what is there in general at home besides jam? Do you have cottage cheese? do you have raisins?
SchuMakher
Gypsy and with tovorogi it finally will be dumb!
Lisss's
but there is no cottage cheese .. but there is an apple and raisins

Gypsy, alone you keep your mind and the dough is pretty sweet, no? I'm thinking, maybe put the whole drain inside ?? I have frozen ..

The dough is quite sweet and rich, thanks to the top pouring, it is possible to plum and can not put anything? The dough is already delicious

Quote: Lisss's

I’m thinking, there is still a filling, when the nuts are ground and mixed with something .. I still have to look for this ..
I suggested mixing nuts with jam above

There are nuts with sugar .. but the loaf is already sweet.
sweetka

Gypsy, I apologize, I looked at your main photo, this is what I saw
Gypsy
Alexandra, Have you been looking for Martians?
Alexandra
well, yes, or in extreme cases, the filling
Well, that is, the pouring, where it was absorbed
Lisss's
calmly, bez panic !!

the filling was determined - delicious!

in the same place, according to the recipe, 30g of filling for 1 bun. so I took this one:

100g walnuts
26g icing sugar
20ml rum / cognac
26g eggs
total - 150g

nuts in a blender, then the rest to the same place, and also twisted it with a blender. Uhty, how delicious I am making nutty for the first time ..

girls who have Ukrainian-Russian flour, I report - I gave 70 g of water instead of 90, the dough came out just right, it could even be a little denser. so be careful with water, u gypsies there flour is drier than ours

and the cream that is applied on top is something !!! such deliciousness, I beat myself on the hands so as not to eat, while I was carrying ground almonds into the refrigerator, and a drop of almond essence, mmmm ...

Gypsy
I have yes, I am in the mountains + desert .. dry. My dough was thick, but the Japanese came up with 90 ml

and I had this, soft, rich. then fermented, became a little tighter, but not thick, noooo, and close

I still have a problem ... I got the dough that if I divide the buns into 5 buns, then I get scared of 75 g buns, I thought I spilled something 2 times - but no, I counted the ingredients, exactly, 390 g. so I made 7 rolls of 53g and fillings of 21g for them .. uzhos, I'm boring, don't fight with your slippers, pliiizzz ...

gypsy, and you have no cut photo? so curious what will be there ..

UFO buns

I didn’t turn out as beautiful as yours, but cool !!! Thank you!!!
Gypsy
Where did it fail, those UFOs Congratulations on successful baking

AlexandraI really don't know
Lisss's
but I have no hole - the filling can be current, because the filling is thick, there was not enough steam, so there is no hole?
Gypsy
Holes were not in all the rolls, apparently in some I did not stick the dough very tightly to the filling, the filling was tender.
Cook

Gypsy what UFOs.
