Cheese bread with additives (bread maker)

Ingredients

(for 500 g):
Water 175 ml;
Olive oil 1 tbsp. l;
Flour 350 g;
Sugar 1 tsp;
Salt 1.3 tsp;
Yeast 1 tsp;
Hard cheese about 80 g;
A tomato 1 PC.
Dill 3 tbsp. l.

Cooking method

  • As usual, all ingredients were mixed in sequence; oil, water, salt, sugar, flour, yeast. On top I added cheese grated on a coarse grater, fresh dill, and finely diced tomato (no seeds, only the hard part).
  • I don't add on a signal, but put it in right away and everything mixes up perfectly!
  • The crust was medium.

Time for preparing:

about 3.5 hours

Note

The bread turned out to be very tasty, although the cheese did not allow it to rise well.

ksyusha69, in the profile, please indicate the type of your oven.

p. from. I was somewhat surprised by the order in which the products were booked. Usually, either the yeast is from below, under the flour, or vice versa, from above, without touching all other products. Maybe this is the reason for the bad lifting? Usually bread and cheese rises perfectly

I have a Moulinex stove (Moulinex), this is the order of laying food there (oil, water, salt, sugar, flour, yeast).

Is the bread from a tomato so red or is it rye ?? Or is this photo distorting color?

ksyusha69, beautiful bread. But there is something wrong with the roof. Maybe you don't need to put the tomato on top of the yeast? This can prevent them from working properly.

... yeast. On top I added cheese grated on a coarse grater, fresh dill, and finely diced tomato (no seeds, only the hard part).

I would put cheese, tomatoes and herbs under the flour, and the yeast on top so that they do not come into contact with anything. And yeast would have thrown 1.5 tsp. And sugar 1 tbsp. spoon, not a teaspoon. It seems to me that yeast is difficult to work without enough sugar and with a lot of additives. But that's all IMHO
ksyusha69
The light of course distorts the photo a little, but not a lot! The bread itself is yellowish in color.

I think the "roof" of the bread does not rise well, because there is cheese.
The chopped tomato should not be watery, otherwise you need to control the "bun", add a little flour when kneading, if necessary.
In general, it seems to me that instead of a tomato, you can add a little bit of Bulgarian pepper, garlic ... because the bread is called "Cheese with additives!"

Excuse me, but how did the cheese interfere with the rise of the dough? It's like adding egg white, or butter, or cottage cheese ... all these products help, not interfere with the rise of the dough ... IMHO of course
Here a tomato can give excess moisture ... can it be dried in olive oil or dried * Kamis tomatoes with basil and garlic) put?
Only then there is more water ... 220 ml for example

Maybe it wasn't due to the cheese that the roof didn't come out plump, of course sun-dried tomatoes are better, but I didn't have them, but the bread itself was baked well.

Ksyusha69:
Yesterday I baked according to your recipe .... however, with my "5 kopecks".
I recalculated the recipe for 1 kg loaf, this is what I got:

serum - 260-280 ml;
• olive oil - 1.5 tbsp. l;
• flour - 510 g;
gluten - 5 g
bran - 10 g
• sugar - 1 tbsp. l;
• salt - 2 tsp;
• yeast - 1.5 tsp;
• hard cheese - about 120 g;
• tomato - 2 pieces (small)
dill, 1 onion (young)
I put in additives at the signal. Whole grain baking mode (no last kneading)
The color of the bread is SO BEAUTIFUL !!!!!! Lovely! The roof hasn't fallen at all! Such a good brick came out! Next time I will add there olives, more bran, and fry the onion. I'll call it "Italian" and add it to my favorite recipes book !!!!
Thanks for the idea!!!!

Thank you! An excellent recipe! Bread turned out immediately and immediately yum! Made according to the recipe in Zelmer 43z011 in basic mode. True, I had to feed the bun with a couple of tablespoons of flour and the cheese was only soft, but the result was perfect!

Bright, beautiful bread!
But try making the dough softer next time, the roof will become smoother, the crumb will be airier, and the bread itself will become higher

Smoked cheese is not mine, I don't like it)))

How to make the dough softer ??? He went up so high, and not dense in taste, but satisfying)))

I gave everything according to the recipe, but having doubled all the ingredients, adjusted the weight for my bread machine! Delicious. Rises perfectly. Once there was no dill - added bell pepper - great too!
