Cooking method

  • Tip: with such a whole grain flour, it is better to knead the dough longer, it becomes softer, the gluten starts to work, the dough is plastic like a wheat bun.
  • Adjust the balance of flour and water, make the bun softer, like for wheat bread. However, whole wheat flour is heavier and requires more liquid.

Note

The bread rose very well. The color is gray bread, finely porous crumb.

There is no need to be afraid to deviate from the author's recipe for the balance of flour and liquid - we can have flour of different quality and moisture content.
