Chrysos Anatole vegetables

Ingredients

Ginger (slice) 4-5 cm
Champignons (small) 300 g
Chinese cabbage 300 g
Leek or early (white part) 3 tbsp. l.
Cashew nuts 100 g
Corn cobs, small canned food. 150 g
soybean sprouts 1 cup
garlic 1 clove
olive oil 5 tbsp. l.
lemon juice (from 1/2 lemon) 30-40 ml
ground paprika 2 tsp
salt

Cooking method

  • The actual name of the dish - Chrysos Anatole (Greek. Gold of the East) is justified both figuratively and literally.
  • Simple and rich in vitamins and trace elements; and harmonious in terms of diverse proteins: nuts, soybeans, mushrooms and corn ...
  • And practically the only cereal that contains a precious trace element - gold, which is necessary for the normal functioning of our brain ...
  • Stage 1
  • Wash and peel vegetables.
  • Cut the ginger into strips.
  • Onions - in rings, garlic - in thin slices.
  • Chop the cabbage finely.
  • Cut the mushrooms into 4 pieces, leave very small ones whole.
  • Stage 2
  • Heat the oil, fry the nuts in it and salt.
  • Add ginger, onion, garlic and fry for a couple of minutes, stirring occasionally.
  • Next - mushrooms and corncobs for 10 minutes under the lid.
  • Add the dressing last (lemon juice + paprika + salt) and cabbage with soy sprouts. They are gentle and do not require prolonged heating. BUT - soy sprouts must necessarily undergo heat treatment for at least 1-2 minutes (if the sprouts are made separately, then 30 seconds is enough, but we also have cabbage, which will lower the temperature when added together with the sprouts, so under the lid and with stirring - a couple of minutes is enough ).
  • Place the vegetables on a ring of rice cooked with a garlic clove or two, and pour over the juice of the stewed vegetables.
  • Bon Appetit!

Note

I didn’t complicate the ingredient part, but I’ll say that I don’t use corn canned in small cobs, which is now easy to buy in Perekrost, Auchan and Metro - sorry for the repeated mention of my dislike of vinegars
A long time ago I replaced it with homemade corn, whoever is looking for will find it: after harvesting corn (I'm lucky - we grow it here) and before mowing the stems for feed, you can collect a decent amount of such small ears in the lower axils of the leaves - these late ovaries do not have time ripen in our climate. It's funny, but I think that in our entire province I am the only one engaged in such collections. But you can soak it in a variety of brines and freeze ...

A little about corn and ginger.

Corn
In addition to its nutritional and taste qualities, corn has many health and benefits for humans.

The grain of corn contains minerals important and necessary for the human body: salts of potassium, calcium, magnesium, iron, phosphorus, as well as trace elements (copper, nickel, gold).

Its protein contains the essential amino acids lysine and tiptophan.
Sugar corn is rich in vitamins E, group B, PP and ascorbic acid.

Corn has a cleansing effect on the body: it is able to remove toxins, radionuclides, cleanse the body of harmful substances - toxins accumulated in cells, corn cobs can protect us from cancer, heart disease and aging. For the growing body of children, corn helps to gain weight and supplies it with vitamins and minerals.

Corn is also rich in those carbohydrates that help normalize and stabilize blood sugar levels. The unique fats in its composition contain up to 80% unsaturated fatty acids (linoleic, linolenic, arachidonic), which are classified as substances that regulate cholesterol levels. They form soluble compounds with it, preventing its deposition on the walls of blood vessels.

Glutamic acid contained in corn is curative for diseases of the central nervous system: epilepsy, psychosis, reactive states, depression, other nervous and mental diseases, with progressive muscular dystrophy, polio and Down's disease.

All this allows us to recommend corn products to people with allergies, diabetes mellitus, obesity and other forms of metabolic disorders, pathology of the gastrointestinal tract, and diseases of the central nervous system.

Ginger

Many people know and love ginger for its ability to quickly restore body tone. And not only male
And this is due to the fact that ginger quickly removes toxins from the blood, acts as an analgesic and powerful antiseptic throughout the gastrointestinal tract.
The only thing, with increased pressure, it is better to refuse drinks with ginger.

When applied externally, the same indications are for the relief of pain and inflammation in diseases of the skeletal system.

And in cosmetics, ginger is indispensable as an antibacterial, pore-reducing and tonic additive in cream bases

Nagira, how many days do you sprout soybeans?
How many times I tried to germinate it, it mostly rots for me before the sprouts become large enough. With wheat, everything is somehow easier for me.

Nagira, how many days do you sprout soybeans?

Asteria, the algorithm with soy is the same as with wheat: 12 hours of soaking and 3 days of germination at t ° 17-25 C.

How many times I tried to germinate it, it mostly rots for me before the sprouts become large enough.

Soy is very high in protein, and its degradation in a humid and warm environment is accelerated; to preserve and disinfect - add 100 gr. soybeans 1 tsp radish seeds. And of course, rinse with 3 times the amount of water 2 times a day. And be sure to drain all the water.

Radish seeds? Interesting ... I'll try to find ...

But I don't drain all the water from wheat, I leave a couple of millimeters on the bottom. Otherwise, it does not germinate in me, but dries up.

I'll have to try to germinate the soybeans dry, otherwise I really, like in wheat, leave a little water.
Nagira thanks for the advice

Asteria, radish is sold in the same place as any other seeds

Do not grow dry soybeans, the beans should be wet, but if you leave water at the bottom, it will provoke mucus (this is quite natural for soybeans, many people mention this when describing germination).

To be able to control humidity, it is best to germinate on weekends - soak on Friday night. I do not germinate much, I take only 100 grams (they will still swell ...).

Dishes - so that the beans are not in three tiers, but also to wash and drain it is convenient: I have a 2-liter can, narrow, a little wider than the usual liter. After draining the water after soaking and rinsing the beans for the first time, place the jar on its side. Plastic lid with slots (they have been selling for a long time - for draining compotes). And during the day, I periodically rotate the jar (along the horizontal axis) so that the seeds, mixing, moisten each other and at the bottom, even the minimum moisture does not stagnate.

It takes a long time to write and read, but to do it after getting used to it is as easy as shelling pears

Thank you!
Still, it was no coincidence that I came across this recipe - lately I have been drawn to spices, especially ginger, cinnamon, cloves ...
And here there are all the ingredients that I love, but it never even crossed my mind to combine them!
