Cooking method

  • Knead the dough from eggs, kefir, salt, sugar and flour. The consistency should be like a good homemade sour cream, so that the dough drips a little from the spoon, and then breaks off and falls. The flour must be adjusted as necessary.
  • I like to take frozen fish - it's just more convenient to work with. Hake and pelengas are great. We want any pitted fish. Cut into 1х1х3-4 cm pieces, you don't need to do this very carefully, and the trimmings will do just fine. Add a little salt, mix.
  • Let's start cooking. Pour oil into a well-heated frying pan. There should not be little oil. If the pancakes are not in fat, they will not rise well. If the butter is cold, it will be strongly absorbed into the dough. So preheat the pan, pour in the oil and make the fire to a minimum.
  • We take the filling and, for convenience, lay it out on the surface of the dough. The fillings should be a full teaspoon with a slide, and I spread it out with it.
  • Then we scoop up the dough with a tablespoon, pour in the fish and now grab the mixture and transfer it to the pan. There shouldn't be too much dough. That is, scooped up the filling and dough with a spoon as much as it could fit and will be enough.

  • Fry until bubbles appear on the surface and turn over. Before adding the next portion, add gas again and let the pan and oil warm up. Again I draw your attention: there should not be little oil.
