Ingredients

peeled rye flour 400 g
wheat flour 1 grade 100 g
flower honey 1 tsp
sea ​​salt 1.5 tsp.
apple cider vinegar 1 tsp
fermented malt 1.5 tsp.
coriander seeds, caraway seeds, anise 1 mustard spoon
water 400 ml.
wheat germ 1.5 tsp.
linseed oil 1 tbsp. l.

Cooking method

  • The malt was brewed with boiling water - about 50 ml. Added honey and salt, stir. When it cools down, add 1 tsp. apple cider vinegar.
  • Put yeast at the bottom of the HP bucket, then pour water, then all the flour. We put on the program "pelmeni" - 20 minutes. Then add the cooled diluted malt with honey, salt and vinegar. After the end of the "pelmeni" program, put the dough on the "Rye" program, pour vegetable oil on top. After completion, put the dough in a mold, leave it to proof for about an hour, then bake in the oven - first at 200 *, then bake at 180 *.

Note

I did it with vinegar for the first time - usually, recently, with sourdough. But because of negligence, she "died" at me, and I really wanted my rye
