Chicken ham

Ingredients

A hen somewhere around 1 kg
Garlic
Salt pepper
Gelatin

Cooking method

  • I did everything by eye. And so let's get started, take a chicken or chicken legs. We remove all the bones with the skin (or you can leave it to an amateur) cut into medium pieces and put everything in a cup, add garlic here through a crusher, salt, pepper to taste. (you can add nuts, bell peppers, prunes, etc.) Then pour out a bag of gelatin (dry) and mix everything WELL. We take a bag of milk or juice, always inside with a FOIL (Tetra Pack) and put all our meat there. Wrap the top of the bag with plastic wrap. Pour water into a saucepan so that when we put our bag there, the water level coincides with the level of our meat. We turn on the gas and cook everything over medium heat for an hour and a half. Time has passed, we take out our package carefully and take it out to the balcony until it cools completely (I did it in the evening, and in the morning it's already ready). Once it has cooled down, carefully cut the box and our ham is ready. Do not add WATER to the meat !!!

and in the sleeve for baking, a kind of sausage, come out?

I make this chicken. Very simple and delicious. I also add all sorts of spices to taste, grated carrots or Bulgarian pepper. For 3 large legs, I take 30-40g of gelatin. I do not wrap it with a film, but I tie it tightly with twine, water does not enter. And you have to try up your sleeve

I haven’t been at the helm either.
Caprice
What an interesting recipe. I'll have to try.

from shoto I did not understand this place ...
GenyaF
Well I mean .... oh! don't even know what!
If the question is about a string, then I knit so that the box does not open. Water, you know, gurgles and wants to connect with a chicken
But we don't need that. in our country, the chicken itself secretes juice and mixes with gelatin.
sweetka
box in the sense of a tetra-pack? that is, the cooking method is the same as for the topic autoressa?
GenyaF
Yes! Cool word - autoress
ludok01
Girls, I took a box of milk "Big mug" 1.5 liters, it is high and water does not get there when boiling.
sweetka
ludok01 , yes, I just never take milk in tetra-packs. but there is a baking sleeve.

GenyaFI'm glad you had some fun, really! although I don't understand why the word autoress is funnier, for example, headmistress. just gender tolerance.

And if the roll is packed only in foil and in its cartoon, in the "stewing" mode for an hour. Interestingly, it will work out?
mowgli
I think that it is possible ...... no, I'm afraid that the water will still penetrate .. something needs to be done ... but WHAT? , AAAAAAA !!!!!!

Wrap the ham in foil, or tightly in a bag for frying, put on a large bag for frying on top, tie it, and take the tail of the bag out from under the lid of the pan, then nothing will penetrate anywhere.

The package is thin, the lid closes freely

Sonadora
Admin, Thank you! A very fun way to cook!

Mowgli, I wanted to turn it over once, without water, during cooking. We bake the meat in the oven in foil, here and here according to the same principle, only in a cartoon.
mowgli
I also thought about it later, and you can also try it in a double boiler ..

In a cartoon and without water in foil? And what will happen to the saucepan? Or if in a cartoon, then without foil?

Heating Teflon with an uneven distribution of the product (and in the case of a roll it will be so) is fraught with damage. Everywhere they write that empty Teflon dishes should not be heated ...

Well, I didn't think that you would take my info so literally - no, it is advisable to pour some water on the bottom so that there is steam for cooking, or you can even fill the bag with water before covering
mowgli
Somehow I didn't think, but I wasn't going to do that)))), I realized that I needed to cook in water ..

You can make this bagged ham and rolls in a regular or heavy-bottomed saucepan. The ham is tied tightly in one bag for frying or foil, you can tie it tightly with a regular bandage, with a thread on top. Then pack this goodness in a second bag for frying, tie it tightly by the tail, which is taken outside the lid to the edge of the pan. Pierce the other end of the bag with a knitting needle so that the bag breathes, just make sure that the bag does not turn over and do not spill water through the hole.

We put the ham in a saucepan, fill it with water, let it boil, reduce the heat so that the water just boils a little (whispers) at 95-98 * C and bring it to readiness about 1-1.5 in time. One kilogram of meat takes about an hour.

Then cool the meat in this bag and in water, put in the refrigerator to ripen.

I often make such meat and rolls, look here 🔗

Chicken ham

The same meat can be cooked in a saucepan under vacuum in a bag, it cooks quickly.

Look here, I'm just swaddling chicken roll

I just made a pork knuckle, cut out a bone, stuffed it, then folded it, tugged it with twine, fried it from all sides in a cartoon, then added a little water and stewed for 3-4 hours

I found another roll on the forum, or rather everything that was left of it from the photos, but you can clearly see how I pack the finished roll in foil and tie it up - nothing comes out! and cooked just in a saucepan with a thick bottom in water

Chicken ham

Bon appetit, everyone!

I got so many ideas !!! on cooking, but the question is, but if in a pressure cooker, then the taste will not be the same? I have a Zceptor pot and a pressure cooker lid for it.
Admin

Well, in a multicooker-pressure cooker we cook Kuku - and it turns out delicious!
You can cook in this pressure cooker - why not ?!

Try any available options and remember - after all, except for you and your family, no one will tell you which option is tastier and in which pan / appliance
julia007
And first I put everything in a baking bag and twisted it well, and only then in a juice box. I put a small load on top so that it was like in a ham maker.
