Lace bread (oven)

Lace bread (oven)

Ingredients

dry yeast 2 h l
warm water 250 g
flour 250 g
salt 1 tsp
Sahara 1 tbsp. l.
flour 250gr
warm water 100 g

Cooking method

  • The bread turned out to be fragrant, the crust crunches, and in the middle it is soft and lacy.

  • Lace bread (oven)

  • Dough
  • 2 tsp dry yeast
  • 250 gr warm water
  • 250 gr flour

  • He heated the water to 36-40 degrees, dissolved the yeast in it and left it for 10 minutes, then poured it into flour and kneaded with a mixer for 7 minutes (with hook attachments).
  • It turned out like this

  • I covered it with a lid and put it in a warm place for 3 hours.

  • Dough:
  • dough
  • 250 flour
  • 100 grams of warm water, and dissolve in it
  • 1 tsp salt
  • 1 tbsp. l. Sahara

  • Knead for about 7 minutes. After the 4th minute, it began to lag behind the walls.
  • Add 7.5 grams of butter (this is similar to the cube given in kindergartens and camps)
  • I kneaded for another two minutes.

  • The dough is smooth and shiny, quite runny, but rises well. Stand for another 1.5-2.5 hours. I managed to hold on for an hour. By the way, the dough escapes from the 2-liter mold!
  • Spread out, rolled in flour, in the molds and left for proofing for 40 minutes.

Note

My comments:
After I took the loaf out of the oven, it began to crack)))
And when it cooled down, it was covered in cracks.
It turns out that the bread "sings"
There are almost no laces, increase over the spreading time in the next. times, it should work out)))

I bake such bread when I want white bread! Better yet, I have not come across bread, although I have tried quite a few recipes. My family respects Lacy very much! And yes, he sings when it cools down notably.

Good evening. Please tell me at what temperature you need to bake such bread?

At 200 degrees 50 minutes (this is without convection, if with convection, then, I think, a little less temperature needs to be done).

Thank you. And then I'm new to this business.

I baked this bread. I liked it very much and will bake it often. I added flour - the dough was very runny. Or was it not necessary to add?
GruSha
No need to add. The lace will disappear)))

I'll add another photo ...

I also add a little to keep the heaps, the flour is different everywhere. But all the same, I don’t make this bread with a hearth so that I don’t have to add a lot of flour. I add it to a normal kolobok, then fold it into a shape, and then let it creep out. But the first time I made this bread completely by hand (kneaded with my hands), I still had to add more flour, otherwise it was unrealistic to knead. And then I got a hearth. Then I bought a mixer with hooks, which simplified the task.
Freesia
I kneaded in C / P, added flour to a soft kolobok. There is lace!

Virgo, please tell me how much fresh yeast to take in grams,
instead of 2 dry spoons. I want to knead the dough, I didn't find any dry ones in stock,
only fresh
Freesia
I took 10 grams

I still have such a question, about a little creamy:
in the recipe 7.5 g of butter, what do these tiny grams give to bread ??
I just thought today, maybe I should have put 75 g, no ??

Don't ... The recipe says:

Add 7.5 grams of butter (this is similar to the cube given in kindergartens and camps)

75 g - this will be a big cube.

poiuytrewq aha .... meaning. I doubt it in vain ...
My childhood passed without gardens and camps, so I was somewhat lost in the landmarks ..

GruShaand I am grateful.

I baked this bread - it squeaks, the parasite - it cools down. The smell is wonderful - it resembles sieve buns, which used to be 10 kopecks each.
