Yesterday evening I decided to make some notes, and inspired by what I read on the site I "poured all the leftovers: whey, kefir, etc." poured whey from homemade cottage cheese into the dough. Girls don't repeat my mistakes! The dough turned out too tender and airy, and for the lash, they have a very juicy filling and they are fried in a cast iron or in a cast iron pan, a slightly tougher dough is required. In short, I wanted the best, but it turned out as always! Conclusion: it is better to pour milk or water with milk powder into the dough of the product from which it is supposed to be fried in a pan. Here !!!

I have already written somewhere that it is better not to do it entirely on whey, maximum 50/50. the dough is really very tender (I baked simple bread), but the taste of whey is felt quite strongly. and I think that it (the taste) should be subtle, so less whey is better

We in St. Petersburg sell a drink based on milk whey with all sorts of juices, etc. I use this if I want to make a whey dough for something sweet, and bread with raisins (the main one from the book of recipes for Panasonic 253) turns out what I need.

The name of the drink is Twist, it is made under the Aktual brand, we produce our Petmol from Unimilk. The full name is a whey drink with added fruit juice and enriched with vitamins.
The name of the recipe - in the section where bread with additives is called - bread with raisins.
And I put this drink in ANY sweet bread (well, my children love sweet bread). Just try replacing the water with this product.
Or make a house eventually. cottage cheese and you will have whey. My grandmother, living in Munich, baked bread only on whey, and cottage cheese was in the morning every day.
