Ingredients

Wheat flour 1st grade 250 g
Fresh pressed yeast 10 g
Sugar 15 g
Salt 4 g
Mustard oil 15 g
Water t = + 38 ° С 175 g

Cooking method

  • At the beginning, we dissolve sugar and yeast in warm water and leave to activate for 30 minutes.
  • Put flour, salt in the bowl of the food processor and, gradually adding a solution of activated yeast with sugar, knead the dough at a slow speed until smooth (5-8 minutes) and only then add mustard oil... We continue to knead at the same speed until a soft elastic ball is formed. We take out the dough from the bowl of the food processor and place it in a bowl lightly greased with vegetable oil for fermentation under a film or covered with a napkin at an air temperature of about + 30 ° C to double the volume.

  • I kneaded a double batch - unlike bread, buns disappear at an astonishing rate.
  • Knead the dough and divide into 6 parts of equal weight and roll each portion into a ball.
  • I got 12 blanks of 75 grams each:

  • Allow 15 minutes of proofing in heat at t = + 30 ° С, make an impression on each bun (optional):

  • and leave for 25 minutes of final proofing in a warm, humid place
  • (40 ° C, at 80% humidity).
  • Brush or sprinkle buns with water before baking.
  • Bake on a stone with steam for about 7 minutes at t = 230 ° C, then lower the temperature to t = 200 ° C, release the steam and bake until tender (about 10-12 minutes).
  • Cool on a wire rack.

In most Western countries, the production and consumption of mustard oil is FORBIDDEN!

I will try to be objective. The taste of these buns is far from sweet, rather it can be said that they resemble the exquisite taste of bread with a subtle bitterness. Moreover, this burning sensation in the mouth some time after baking (say, that way, after 10-12 hours) disappears. The specific smell of mustard oil is hardly felt during the cooling period of the buns.
