Oven loafs with Cambozola cheese

Ingredients

Wheat flour 360 g
Water 225 ml
Salt 7 g
Cambotsola Light Cheese 105 g
Yeast 5 g

Cooking method

  • Mix flour, salt, yeast, finely chop the cheese, add water.
  • Kneading the dough in the Bread Maker until the dough is smooth, the bun is very soft.
  • The first proofing of the dough in a bowl, greased with butter, in the oven at 30 * C until the dough is doubled.
  • Knead the dough from the edges to the center.
  • Forming two oblong loaves, placing on a baking sheet. put the bars on the sides with paper so that the loaves retain their shape and do not creep to the sides.
  • Second proofing in the oven at 30 * C until doubled, then remove the dough from the oven.
  • Preheat the oven to 230 * C. Sprinkle the loaves with flour, make oblique cuts on the dough with a razor.
  • We put a baking sheet with loaves in a preheated oven for baking. After 10-15 minutes, reduce the temperature to 200 * C and bake for another 10-15 minutes until tender, check with a temperature probe.
  • Cool the finished loaves on a wire rack.

Note

Cambozola Light cheese is a soft cheese of 25% fat, interspersed with green noble mold, and with a white dense moldy crust, which I cut off a little. In the photo of the crumb of bread, individual green grains are visible.

The crumb is porous, soft. The crust is strong.

Good table white loaves to taste! For my taste, you need to add a little more salt.

P.S. The taste of the bread showed up the next day! A well-defined taste and smell of cheese has appeared, and there is enough salt, even a little taste of salty cheese is felt! And the crust of bread is softer!
