Souffle cake Tenderness

Ingredients

flour 100 g
egg yolk 1 PC
sugar 80 g
butter butter 65 g
cottage cheese 10% fat 220 g
sour cream 15% fat 65 g
eggs 1 PC
butter 65 g
vanilla extract 2-3 drops
peaches 3 pcs
egg yolks 40 g
sugar 30 g
egg whites 75 g
corn starch 45 g
sour cream 15% fat 125 g
melted butter 30 g
ground nuts 1 tbsp
sugar 60 g

Cooking method

  • The amount of ingredients is given for baked goods in a 20 cm diameter dish.

  • 1. Sand base.

  • Prepare a dough from the first 4 ingredients: grind the yolk with sugar until white, add butter at room temperature and beat until fluffy. Add flour, knead with light movements. Distribute by hand, chop, chill for 30 minutes, sprinkle with nuts and bake until half cooked.

  • 2. Curd layer

  • Rub the cottage cheese or knead with an immersion blender into a soft mass. Combine with sour cream, egg, butter, vanilla. Stir until smooth and distribute evenly over the base.
  • Peel the peaches, cut into 6-8 slices each, distribute evenly on the curd mass. Slices of peaches should be pressed into the curd mass, and not just spread out on top. With light movements, sprinkle the mixture with a small pinch of dry agar.

  • 3. Prepare mass for soufflé.

  • Beat the egg yolks with sugar and vanilla until white. Combine with sour cream and melted butter.
  • Mix sugar and starch. Beat the whites into a strong foam. Without stopping whipping, introduce the starch-sugar mixture in small portions. Combine the protein and yolk masses and pour into a mold.

  • Bake at 160 degrees for 70-75 minutes, leaving the oven door slightly ajar.

Note

The cake is very delicate and harmonious: crunchy base, fragrant and juicy interlayer, airy soufflé with the final chord. It is constantly on the menu of many Viennese pastry shops.

Peaches can be substituted for apricots.

Slices of peaches should be pressed into the curd mass, and not just spread out on top. With light movements, sprinkle the mass with a small a pinch of dry agar.
