Wheat bread with potatoes and cottage cheese (oven)

Ingredients

Wheat flour 600 gram
Boiled potatoes with salt 200 grams
Old cottage cheese 160 grams
Potato broth 90 ml.
Curd serum 50 ml.
Vegetable oil (olive) 2 tbsp. l.
Honey 1 tsp
Salt 1.3 tsp
Yeast saf moment 1.5 tsp.

Cooking method

  • Boil fresh potatoes, cool until warm.
  • Add potato broth, vegetable oil, cottage cheese, curd whey to the potatoes - mix everything well, pour the mass into a bucket of a bread machine.
  • Add flour and other ingredients.
  • Switch on the "dough" mode. Be sure to track the state of the kolobok.
  • There is enough liquid in the dough, flour too. I add flour gradually, first 500 grams, then gradually the rest. At first the bun will be dense, but in the second batch and before lifting it will become quite soft. The property of potatoes (like cottage cheese) is to make the dough very soft, so do not add a lot of liquid to the dough, wait for the second batch, and adjust the bun with flour.
  • If you need to make the amount of dough less, then reduce the amount of potatoes to 150 grams, cottage cheese to 100 grams, liquid (broth and whey) to 70 ml. The amount of flour will be required about 400-450 grams, more precisely, the bun will show.
  • This is how the dough looked from a bucket of a bread machine at the end of the batch.

  • This is how the dough looks on the table before cutting.
  • Wheat bread with potatoes and cottage cheese (oven)
  • The dough was formed into bread in a mold, as it looks after proofing and before baking. I smeared it on top with an egg and sprinkled with white sesame seeds.
  • Wheat bread with potatoes and cottage cheese (oven)
  • The bread is ready and this is how it looks

  • And here are the morning pieces of bread. You can judge for yourself the structure of the crumb of bread.

Homemade cheese curl

From the dough prepared according to the recipe above using potatoes and cottage cheese, you can bake such a pie in the form of a curl with homemade homemade cheese.
Homemade cheese can be replaced with regular cottage cheese.
Prepare the cheese (cottage cheese) as follows: knead the cottage cheese with a fork, add a little sugar and 1 egg, mix everything well.
Now we make curls, fold into a mold, and distribute the cake. Before baking, grease the pie with a beaten egg on top and sprinkle generously with sugar. You can make another dressing.

We take the cake out of the mold when it cools down and eat it with great pleasure, even with baked milk.

Admin, thanks! Today I finally baked bread according to your last recipe (fortunately, the weather allowed me to continue with the experiments in the oven) - "potato sour cream", though without flax seeds. She did not deviate a step from the recipe (except for the already mentioned flax seeds). It turned out two beautiful bread, as you wrote, the bread is very fluffy and fragrant! A small loaf, my girls (mother and daughter) were "sentenced" in almost one sitting, I hope that at least the second will wait for my husband from work. I already had experience in making potato bread in cotton, but in the oven ... everything seemed to be out of reach ... but in vain, the result is amazing. And of course I could not resist and from the heart took a picture of the freshly baked handsome man (from the second only a piece got into the frame). I'll brag in the evening ...

Rommie! Today I baked your Option 5 "Curl with homemade cheese". Beauty is indescribable. It's a shame to tears that I am now without a camera (now I will certainly repeat it again). It tastes like an amazing airy, openwork and perforated dough (I could not resist and added a little of my French sourdough). The only question is: my dough around the cottage cheese seems to be a little damp - I didn't bake the cheesecakes, or should it be? Baked at 200C for about 45 minutes) Homemade and dry cottage cheese, melted during baking. Above, on the sides and bottom, the cheesecakes were very beautifully browned (I was afraid that they would overcook). Baked in a Teflon split cake mold.

Admin help to figure it out:
If you need to make the amount of dough less, then reduce the amount of potatoes to 150 grams, cottage cheese to 100 grams, liquid (broth and whey) to 70 ml.
This is how to understand 70 ml. each or 70 ml. (broth and whey together)

Admin, here:
Option 4 - Wheat bread with potatoes and cottage cheese from Admin https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=4297.15 (post16)
and other questions: nothing has been written about yeast.
If you make a filling with cottage cheese, approximately how much cottage cheese is needed?
Admin

The recipe says (broth and whey) to reduce - it means both together.

I did not count how much cottage cheese is needed - a little.

I make curd filling, stuff buns with it, eat the rest for breakfast or .....

here is my creation, thanks to Admin for the recipe, it turned out very airy and tasty
I divided the dough in half, made half with cottage cheese, and the other half with sugar and also poppy seeds. Which rose from cottage cheese 2 times higher.
And for some reason I have flour for 100 grams. less went
Only I still don't understand Admin, according to the recipe on page 2, post 16:

Potato broth - 90 ml.
Curd serum - 50 ml.

If you need to make the amount of dough less, then reduce the liquid (broth and whey) to 70 ml.

which of these options is mine correct:

1. Potato broth - 70 ml.
Curd serum - 70 ml.

2. Potato broth + Curd whey = 70 ml.

Recipe for full bread:

Wheat flour - 600 grams
Boiled potatoes - 200 grams (boiled with salt)
Old cottage cheese 160 grams
Potato broth - 90 ml.
Curd serum - 50 ml.
Vegetable oil (olive) - 2 tbsp. l.
Honey - 1 tsp
Salt - 1.3 tsp.
Yeast - 1.5 tsp.

Further I have written:

“If you need to make the amount of dough less, then reduce the amount of potatoes to 150 grams, cottage cheese to 100 grams, liquid (broth and whey) to 70 ml. The amount of flour will be about 400-450 grams, more precisely, the bun will show. "

Choose your options.

In any case, adjust the ratio of flour, potatoes and liquid; the state of the bun is the basic rule of baking in a bread maker.

Admin, like I got your bread!
True on pure whey, for lack of broth. This one came out:

His skin is thin, the roof is slightly wrinkled after cooling, but delicious, like a sandwich. Thank you for the good recipes, I didn't have to add or subtract anything!
