May I go first? I propose a very tasty dish called

KHICHINA
we need for the test:
kefir or whey-250 gr.
wheat flour-2 tbsp
a pinch of salt
filling: any cheese, I put Suluguni or Adyghe.
greens (to your taste)
garlic-2 tooth.
black pepper
paprika
drain oil -50g.
Knead the dough from kefir, mukma and salt, cover with foil and let rest for 30-40 minutes. Grate cheese, add greens, finely chopped, garlic, spices.
Divide the dough into small balls. Flatten each ball into a cake, put the filling in the center, pinch the edges, you get a bun with a filling. Then flatten this bun and gently roll it out with a rolling pin as thin as possible. Preheat the pan. Fry the cakes over medium heat in a dry skillet on both sides.
Melt the butter. Put the fried cakes in a stack one on top of the other, grease each one with melted butter.
Serve hot.

RISOTTO WITH WOODS AND FETA

What do you need:

250 g arborio rice
1 bulb
3 young squash
4st. l. vegetable oil
1L vegetable broth
100g feta cheese
0,5 glasses of pitted olives
* bunch of parsley
* sprig of basil
* salt to taste

Cooking time-35min.
Servings: 4
1 serving - 531.7 kcal


What to do:

1) Peel and chop the onion. Wash the zucchini, cut in half lengthwise, then cut into 1cm slices. Heat in a deep saucepan 2 tbsp. l. rast. butter, sauté onion, 4 min. Add zucchini and cook, stirring occasionally, 3 min.
Pour dry rice into a saucepan, mix. Pour in 350 ml of broth, continue cooking until the rice has taken up all the liquid again. Pour in the remaining broth, cook until completely absorbed.
2) Mash the feta with a fork. Cut the olives into quarters. Wash parsley, basil, dry and chop. Mix feta, olives, herbs with the remaining oil. Add the resulting mixture to the rice, remove from heat and stir quickly. Serve immediately. Serve salt separately.

Grate cheese, add spices, you can greens, garlic. Put the cheese mass on the dough, roll it up. CHEESE CAKE (without baking)

1 can of condensed milk
100 g icing sugar
500 g soft cottage cheese
Any favorite fruit or berries

Mix everything except fruits and beat with a mixer so that there are no lumps. Put half of the mixture in a detachable form.
Then place the fruit or berry slices.

Cover with the remaining mixture on top. Decorate the top of the cake as you wish and refrigerate for at least 6 hours.

Why don't I write as much as I always do by eye, and everyone can bake pancakes according to their favorite recipe ...

For filling:
curd - cottage cheese, yolks, sugar, raisins, vanilla
poppy seed - grated poppy seeds and sugar
cherry-pitted canned cherries

we bake pancakes first in a frying pan of a smaller diameter (the number of pancakes is a multiple of three) and in a large frying pan pancakes in the amount of a third of the small ones ... then we roll the pancakes into tubes and wrap all the pancakes in a large one with different fillings ... we put all the pancakes in a rectangular container with creamy butter and in the oven for 30 minutes ... when it is cool, take out the pancake and cut it on a cross by three centimeters, put it on a plate and serve it with sour cream, honey, whatever you like ...

Good day everyone! Today I made CALCULATORS with cottage cheese.
She rolled thin pancakes into tubes, then bathed them in butter, sprinkled them with powdered sugar, put them in a dish and baked them, simmered them in the oven over the smallest fire.
Lunchboxes were quickly destroyed at lunchtime. Everyone has their own recipe, and I want to share mine. So:

CUSTOMERS

FOR PANCAKES:

wheat flour-2.5 cups
milk + kefir-3-4 glasses (I do it in half)
*** (Serum can be used!)
sugar-0.5 cups (or 3-4 tbsp. l.) I always try to make it sweet, and you can add as you like.
pinch of salt
vegetable oil-2-3 tbsp. spoons
I quench soda in kefir - on the tip of a teaspoon
eggs-2 pcs.

FOR FILLING:

cottage cheese-300gr
sour cream-30gr
1 egg
wheat flour-10gr
salt

You will also need:

sour cream-250gr
milk-50gr
grated hard cheese-40g
salt-1 tsp l.
1. For pancakes I mix eggs with salt and sugar, pour in half of the liquid (milk + kefir), (added soda to kefir), then add sifted flour and beat until a homogeneous dough is obtained. Gradually add the remaining liquid and rast. oil at the end. I mix everything so that there are no lumps.

2. Pour the finished dough in small portions into a hot (I love cast-iron) frying pan in small portions and fry the pancakes on both sides. I got 16 pieces.

3. Rubbed the curd, mixed with sour cream, added an egg, flour, salt. Mixed everything (you can not add flour and not ... it all depends on the density of the cottage cheese)

4. Put the filling in the middle of each pancake and rolled it up.

5. I put the tubes in a mold, filled with sour cream diluted with salted milk, sprinkled with cheese and set to bake for 20 minutes. on a very small fire. They must languish.

6. When served to the table, cut into pieces.

I will post photos a little later.

*) Reference: Nalistniki in traditional Ukrainian cuisine are cooked on the last day of Maslenitsa-cheese-plant. They are served during various family holidays: birthdays, name days, weddings, christenings.

I mix milk and kefir so that the pancakes are tender (they melt in the mouth), and sometimes I can add beer to the dough (about 50g). I was very surprised when,
adding beer, the taste of the pancakes just shook me. The only thing, before adding flour, taste the liquid, it should not be cloying, salty ... Everything should be in moderation. And vegetable oil in the dough is required (easily removed from the pan).

Cheese whey, especially on pepsin, is poorly stored even in the refrigerator. Better to freeze immediately.

Curd whey is stored for a very long time in the refrigerator - I keep it for 2 to 3 weeks - everything is fine.

If there is a lot of whey, I leave some in the refrigerator, pour the rest into containers and freeze.

After defrosting it retains its properties.

CREAM WITH STRAWBERRY

We will need:


cottage cheese-500gr
strawberry-150gr
mint or lemon balm-4 sprigs
milk-50gr
honey-80gr

Preparation:

1. Beat honey, cottage cheese, milk and some strawberries (I use a blender)

2. Add a little chopped mint or lemon balm to the prepared mass and mix again with a spoon.

3. Add the remaining strawberries, which were cut into cubes, to the mass.

4. It will be very appetizing and beautiful if you put the curd cream with strawberries in glasses, decorate with strawberry slices and mint leaves.
