Ingredients

Dough:
Wheat flour 380 g
Fresh yeast 13 g
Milk 150 g
Water 30 g
Sugar 60 g
Butter 60 g
Salt pinch
Filling:
Plum 600 g
Fill:
Sour cream 25% + curd cheese "Almette" 150 g
Sugar 70 g
Poppy (you can not use) 30 g
Flavoring

Cooking method

  • For pouring poppy seeds, steam with boiling water, leave to cool completely. Drain the water. Beat poppy seeds with sour cream, cheese (you can only use sour cream), sugar, flavor.
  • For the dough, grind the Yeast with 10g. Sahara. Leave on for 10 minutes.
  • Milk, water, salt, remaining sugar, butter, warm up to 37C, stirring until completely dissolved.
  • Add yeast.
  • Add flour in portions. Knead with a food processor for 7 minutes. The dough is smooth, elastic, lags behind the walls.
  • Collect the dough in a ball, put in a deep bowl and leave in a warm place until it increases 2-3 times (I have 1 hour).
  • For HP, you can use the "Dough" mode.
  • Next, knead the dough, put it on a baking sheet covered with paper (put the paper with a large margin, so that later it will be convenient to carry the pie) and distribute it with your hands into a cake (I have d 30 cm.), 1.5-2 cm high. Cover with a bag and leave in a warm place (I turn on the oven and put the baking sheet on top) for 15-20 minutes.
  • At this time, cut the plums in half, remove the seeds.
  • Use scissors to make cuts over the entire area, almost to the bottom. Insert plums into the slots.

It turned out very well, but it spread out over the edges, probably with more fatty sour cream and cheese, it turns out a thicker version that does not drain, but ... I'm already happy, you can do
