Ingredients

flour 700 gr.
dry yeast 1.5 tsp
milk 150 ml.
sugar 90 gr.
melt butter and cool 90 gr.
eggs at room temperature 3
lemon zest or orange 1 tsp
cardamom (powder) 1/2 tsp
salt 1 tsp
egg + a few drops of ice water for grease on top
poppy
if you bake with filling:
plum jam 200 gr.
ground biscuit 2 tbsp. l.
coarsely chopped walnuts 3 tbsp. l.
2 molds 26 and 16 cm in diameter. cover the bottom with baking paper

Cooking method

  • Mix yeast with a small amount of milk and 1 tsp of sugar. Leave on for 5 minutes.
  • Add the rest of the ingredients and knead the elastic dough. Knead for 10 minutes.
  • Put the dough in a bowl and put it in a warm place, let stand for 2-2.5 hours.
  • knead the dough that has come up and divide into 3 parts.
  • Divide 2 pieces of dough into 8 large rolls and 3 smaller ones. crush each piece and place 1 tbsp. l. fillings. pinch and roll into balls.
  • Lay them in a mold (diameter 26 cm) and leave to rise for 30 minutes.
  • Then brush with an egg, sprinkle with poppy seeds. Bake at 180 degrees for 25-30 minutes in a well-heated oven.
  • Divide the 3rd piece of dough in the same way. but bake without filling (in a 16 cm shape) in the same way as burgers. only they will be smaller.
  • Free the ready-made buns from the mold and cool on a wire rack or wooden board.

Thanks for the recipe. Delicious buns turned out. Made without filling. Kneading in a bread maker. Milk had to be added approx. 100 ml, until you get a soft lump. It was necessary to immediately calculate the amount of liquid per 700 grams. flour.

I also baked your buns, only I have curd filling. I made dough according to the recipe, only in half size, for 350 gr. flour. I put a lot of fillings and some of them "unpacked" a little, you can see in the first photo.

The dough was kneaded in the HP program with a yeast dough, where it was suitable, and added 100 ml of milk as Elena Bo wrote, you wrote that our flour is denser, the dough turned out excellent.
in a couple of buns I put the filling of Stolichnye candy with liqueur inside, for testing, there was no time to make the filling, but if you want with chocolate, it turns out very tasty and the aroma is awesome. And the second portion was simply sprinkled with cane sugar, it is brown and very large, it turned out beautifully.Directly pies :) I admire and happy like an elephant. Thank you so much
