Ingredients

Wheat flour 600g.
Sugar 2st. l.
Salt 1h l.
Fresh yeast 20-25g.
Kefir 250g.
Butter 75g.
Eggs 2pcs (110g.)
For lubrication:
Egg 1 PC.
For sprinkling:
Sesame

Cooking method

  • Grind yeast with sugar.
  • Add kefir, softened butter, eggs, flour, salt. Knead with a combine (knives) for 7 minutes.
  • Then round the dough, put in a deep saucepan, cover with a towel and leave in a warm place until it increases 2-3 times. I put in the off microwave with a mug of boiling water for 1 hour.
  • For HP the "Dough" mode.
  • Then knead the dough, divide into 6 equal parts. Roll up a tourniquet from each, 40cm long:

  • Connect the bundles three at a time and lay them on top of each other at an angle of 90C. Then put the bottom 3 pieces on the top:

  • Then put the left 3 pieces on top:

  • Now we turn the left and right harnesses to the center and start them under the central harnesses:

  • As a result, we get such a braid:

  • Carefully transfer it to a baking sheet covered with paper, cover with a towel and leave for 30-40 minutes
  • Brush with an egg before baking, sprinkle with sesame seeds.
  • Bake in an oven preheated to 200C until golden brown. I have about 40 minutes.
  • Cool on a wire rack.

  • At first I kneaded half of the norm, but I looked at the resulting lump of dough and could not imagine how it would be possible to roll out the harnesses. Although for me 600g. flour, of course, critical weight - kneaded the second half !!! BUT!!!! Half of the braid is gone !!!! Air pulp !! Recommend!!! Believe me, no one will remain indifferent!

Omela, I am the first with my pancake. I am reporting that the kefir was ancient and I threw a pinch of soda into it so that everything tasted fine. The dough was made in KhP. The dough is excellent, smooth, pleasant to the touch, but, in my case, it was necessary to add flour.Yes, I cut it into bundles, yes, I wove a braid, but! during proofing, it blurred a little to the sides, and during baking - in general ... it turned into a kind of wicker cake, I photographed it, but I probably won't put a photo. I will correct it, I will repeat it in a couple of days (kefir must be disposed of). But now I understand WHAT the dough should be!

P.S. I must say that little is left of the wicker - flatbread, the taste is very pleasant!

In the photo, the flagella are a little denser than mine. I love to plait braids, I hate to roll the flagella! In general, I did not make the last re-sub-podding (the length of the bundles was not enough), and as a result, my wicker basket grew into a whole baking sheet for pizza (30 cm). In the oven, she was still a little rattled by the pressure of feelings, apparently.
In general, I will not take pictures, the braid freezes, the dimensions are impressive. What is delicious, I do not even think about it. By the way, I have one big egg in the dough, goose, 115 g, here. The rest is by prescription.
