Zucchini caviar with mayonnaise

Ingredients

Zucchini, peeled and peeled 3 Kg
garlic 10 teeth
mayonnaise 250 g
tomato sauce 250 g
salt 1 tbsp / l
sugar 100 g
ground red pepper 2 pinches
vegetable oil 100 g
9% vinegar 2 tbsp / l

Cooking method

  • Pass the zucchini and garlic through a meat grinder, add the rest of the ingredients (except vinegar), mix and cook over low heat for 2.5-3 hours. Add vinegar at the end of cooking. Pour into sterilized jars and roll up.

Note

I got 6 half-liter jars.
I'm not a fan of squash or eggplant caviar, but this caviar is really delicious.

It seems to me that you should not combine eggplant and zucchini in this recipe. I have never heard of mixing these vegetables.Even if the taste from the Georgian sauce changed the taste, then the eggplant is even more so.
Try not to deviate from the recipe for the first time, and then decide for yourself how you like.

rusja, I made such caviar once only from some zucchini, another time - zucchini in half with eggplant. Of course, the taste is different, but the zucchini-eggplant also seemed very tasty to me !!

This year I decided to try this recipe with mayonnaise for a try. The caviar turned out to be delicious and sharper than the one I usually make. Now there is a choice
