Ingredients

skim milk (0-0.5%) 300 ml
butter 60 g
fresh yeast 25 g
Sahara 2-3 st. l.

2 tablespoons greens (you can use parsley, thyme, dill, basil, sage) 2 tbsp. l.

Cooking method

  • The mashed potato powder looks like this.

  • First, let's prepare the dough. Sift the flour. Heat the milk over low heat with butter, salt and sugar up to 40 C. In a bowl we cover the yeast, pour 2-3 tablespoons of warm milk and add 1 tablespoon of flour, mix and put in a warm place for 10-15 minutes so that the dough foams and increased in size.

  • Return the rest of the milk to the fire and warm it up without boiling, add the mashed potato powder and stir well.

  • Cool to 40C and pour into sifted flour. Mix slightly.
  • Then add the dough.

  • Knead the soft tender dough for 10 minutes (if it seems dry, you can add a couple of tablespoons of warm water).
  • Cover with foil and leave in a warm place to come up (in about 20 minutes my dough has grown to the brim).
  • While the dough comes up, prepare the filling.
  • Cut the leek into rings, simmer until soft in butter, sprinkle with ground pepper. Cool, add grated cheese (if the cheese is spicy, then you do not need to add salt), herbs, and a raw egg.

  • After the dough has increased in volume by 2-3 times, roll it into a rectangle and apply the filling. (I was so carried away by the process that I forgot to take photos)
  • Then take one edge (on the short side) and roll up to the center. do the same with the other edge.
  • Cover the form with baking paper and carefully insert the roll into it. Do not repeat my mistake: do not use silicone rectangular molds - it will "tear" in different directions, unless it has a rigid frame.

  • Place in a warm place so that the dough rises, about 20 minutes. Brush with yolk on top. Shallow transverse notches can be made, but this is not necessary.
  • Send the form into an oven preheated to 170C and bake for 30-40 minutes.
