Zucchini stripes

Ingredients

Zucchini
Dill
Garlic
Onion
Carrot
For the marinade:
Water 2 l
Sugar 1 glass
Salt 0.5 cups
Vinegar 9% 1 glass

Cooking method

  • Glass - 250 ml.

  • We wash the banks. We put the dill on the bottom in a thick layer to completely cover the bottom. Next we cut 1-2 cloves of garlic. Then we cut a small onion, in one layer, to completely cover the dill with garlic. Next, cut half a small carrot, again in one or two layers, put it on the onion. All this is well tamped with a crush, so that it takes up less space.

  • Wash zucchini, cut into pieces, approximately 11-12 cm long (if we do it in liter jars, if in others, then try on the height of the jar). Next, cut off all the sides, and discard the middle. Cut the sides into strips about 1 cm thick and put them in prepared jars.

  • Cook the marinade. We put the water on the fire, bring to a boil, add sugar and salt there, stir until dissolved. Pour in the vinegar and immediately close the lid so that it does not evaporate. How it boils again - remove from heat and, without opening the lid, cool to room temperature. Do not open the lid all this time! Otherwise, the vinegar will evaporate.

  • When the marinade has cooled down, pour it into jars of zucchini. Then we sterilize our zucchini for 25 minutes (the time is indicated for liter jars) and roll up with sterile lids.

Delicious zucchini. we close every year without fail. We love to chew them with Greek people (like here), and in general it is delicious with any dish.

Zucchini hasn't been ugly these days, and I still couldn't buy it. I bought the zucchini young and not large, in the core there was only a hint of seeds, so I did not remove this middle, otherwise there would be nothing to close - everything would be cut off.
Maybe someone will come in handy. I had 4 kg of young zucchini, they fit tightly into 7 liter jars. The marinade was just a little short of the seventh jar - I cooked it up.
Dill, onions, carrots are put in sufficient quantities, as in the recipe.
Closer to winter we will try, I will tell you.

My zucchini turned out to be oversalted, I put everything according to the recipe, but I still sin on salt. I have repeatedly come across the fact that the salt is not always the same, there is also too salty. Then another flaw of mine, I put a little of any green tea in the jar. It is the herbal saturation that is lacking. Yes, and my zucchini did not fit this recipe, probably too tender or I can't understand what they are missing. They turned out to be soft, but I wanted elasticity in them and crunchiness. In the fall, take 2 will be, with the amendment of my jambs.

Taia, thanks for the report! For hardness and crunchiness, you need to leave only the sides, I wrote. Well, it is better not to take very young zucchini for this recipe, they are too tender.
And as for salt - yes, there are different salinity. I eat everything a little salty, if someone is okay with salt in a dish, then I already have a lot. So, there is no excessive salinity in these zucchini at all. So it's definitely a different salt.
