Pickled tomatoes without vinegar

Ingredients

Ingredients per liter jar:
Tomatoes how much will fit
Onion about 1 medium onion
Black peppercorns 3 pcs
Carnation 2-3 pcs
Bay leaf 1 PC
Vegetable oil 1 tbsp. l
Ingredients for 1 liter of marinade:
Water 1L
Sugar 4 tbsp. l without top
Salt 1 tbsp. l

Cooking method

  • These tomatoes should be placed in liter jars. For some reason, it is not tasty in large cans.
  • Put spices at the bottom of the cans.
  • Cut the medium-sized tomatoes in half and stack them in layers. When a couple of centimeters remain to the top, lay the onion cut into rings. Pour a tablespoon of vegetable oil on top.

  • Marinade:
  • There are no subtleties here - we pour salt and sugar into water and boil
  • One liter of marinade is enough to fill two liter cans of tomatoes.

  • Pour the tomatoes with marinade, cover with lids (do not roll up, but just cover for now) and set to sterilize in a saucepan with water for 5-7 boiling minutes. We put a cloth on the bottom of the pan.
  • After sterilization, close the lids tightly and put under the blanket.

Note

Actually, I'm not a big fan of canned vegetables, but I really like tomatoes for this recipe.
This is how my grandmother used to put tomatoes, and then my mother. When I began to make them myself, I was very surprised that there was no vinegar at all. The flavor is quite different from the marinade options with equal amounts of salt and sugar, plus vinegar.
So I recommend this recipe to anyone who wants to diversify the workpieces.

Can you store them at room temperature? Do not explode?

As long as I remember. Mom always made tomatoes this way, now (in the sense - starting from the 7th grade) I do the same. Tomatoes don't need any vinegar. They keep well in jars for a couple of years. And in any cans - I close both 2 and 3-liter ones. The size of the can does not affect the taste at all. Only I am a fan of adding a couple more pieces of carrot and a few sprigs of parsley.

raya1 Excellent. Let's do it without vinegar now, thanks!

Personally, I store all canned food at room temperature, because there is no other way. Only it is worth staying away from the battery, of course

So go ahead and with the song

For lovers of seaming without vinegar, I also recommend paying attention to the salad recipe from rinishek

Raya, this is a purely subjective opinion about the volume of cans. Just a 3-liter jar in a day or two cannot be eaten together, for example, but a large jar will have to be eaten for a long time or in a large company
The habit of putting these tomatoes only in liter jars, apparently, was inherited by me along with the recipe

So maybe throw in a recipe?

And this year I spun tomatoes according to a similar recipe, only there the onion between the rows of the tomato is poured into the "classmates" in the "cook quickly and tasty" group I picked up the recipe, actually here it is "on a 2-liter jar about 1.5 -2 kg of medium ripe tomato, 3 cloves of garlic (cut into small pieces), 3 lavrushkas, 5 pieces of cloves, 5 peas of black pepper, dill umbrellas, horseradish (cut into rings), 1 large onion (cut into half rings) ..I also put currant leaves, cherries (this is not necessary, if they are not, it is not scary) So, on the bottom of a clean dry jar we put dill umbrellas, leaves (if any), chopped garlic, horseradish, cloves, peppers, lavrushka .. Cut tomatoes in half and put in a jar .. pour half rings of onions between them .. after filling the jar, pour incomplete 2 tablespoons of salt without a slide, 3 tablespoons of sugar, pour boiling water and put in a saucepan on a boiling water bath for 25-30 minutes .. after we take off the set time, roll it up, cool it .. EVERYTHING .. "I think it will be delicious, and for a change without vinegar, the kids are
Ru
It really tastes good. The taste is more delicate, natural, or something. There is no that obsessive sourness that vinegar often gives.
For me personally, currant and cherry leaves are clearly associated with cucumbers and my soul does not accept them in tomatoes, although I often come across this option in recipes and cannot dispute its right to exist. In any case - down with tomato vinegar!

A very cool and healthy recipe!
My friend gave me time in an owl, and when the boy was born, I began to make such tomatoes for him.
The very thing for the child, he calls them "tomatoes with a chicken".
And recently I read that you can diversify it if you cover the bottom of a can (liter) with chopped garlic.
The rest is the same as in this option.

Thank you, it turned out very tasty! I made a small jar for testing - it was scattered in 1 arrival of guests ...
We'll have to do more - they ask)

And the sliced tomatoes don't "creep"? Why cut them at all?

I join the question!

Is it possible not to cut, but to take small ones?

You don't have to cut it! Then there is a lot of empty space that goes to waste
And if, when the peel is very dense, the marinade does not penetrate well through it, and for a long time. It so happens that after opening the jar, the marinade is delicious, and the tomatoes are fresh inside.

If the tomatoes are strong inside, then nothing will happen to them, if cut in half, they will fit tightly, and the marinade will penetrate well and will be salted well.

mamusi, Rita, it can be mixed, the cut ones do not creep. More acid is released from the cut (preservative)

Last year, I rolled up 4 cans, two of them fell off the lids during storage. I liked the taste very much. Now I sit thinking to take a chance or, well, them. In terms of washing, sterilization, proportions, I very carefully observe, I sin on the seaming lids or it was too hot to stand for them. Did anyone have such a thing? This is the first time I have such a case with seaming. but delicious, I really want

Did anyone have such a thing?
It was. Last year. Not according to this particular recipe, but by analogy with tomato juice and lecho, ketchup - I don't add vinegar to them, everything is okay.

I rolled up 15 liter jars of chopped tomatoes, without onions, it promotes souring. and put sugar on each jar on 4 tables. l + 1 tsp. salt All swelled up. Whisked them, + zucchini, eggplants, in general, like ketchup sauce, cooked. Fine.

But uncut small tomatoes, also rolled up 15 jars according to the composition of sugar and salt - they stood, the tomatoes are delicious and the brine cannot be torn off.

Maybe it depends on the variety of tomato. But I think that it was just that there was less brine in the jar with the cuttings, perhaps the halves did not have time to warm up properly. Although they stood after sterilization under a fur coat for 4 hours.

Well, most importantly, all the same, not a single tomato flew past your mouth

I didn’t have large tomatoes, and with onions it’s always okay to follow a different recipe (with vinegar). Can sterilize longer? And I liked the cut ones, they are somehow more evenly marinated.

No, they don't creep. I have been covering similar tomatoes for over 15 years. Very tasty, just put the onion on the bottom. And cut them so that more tomatoes fit into the jar, because the jar flies away after opening in a matter of minutes and the brine is drunk with pleasure.
