Cooking method

  • The recipe is inspired by the recipe of Maxim Morozov, the magazine "Food for the Whole Family", №8 / 2009 .... but only inspired

  • Deliberately did not indicate:
  • 1. What meat is used to prepare borscht. Everyone has different preferences. I don't like chicken broth borscht, but my household likes it. So choose for yourself what kind of meat or poultry you use.
  • 2. The amount of vegetables. Someone likes more onions, someone does not accept potatoes. Here, too, only your priorities.

  • Well, the cooking technology is as follows. All vegetables are grated for Korean carrots (and cabbage too). They are obtained in thin strips.

  • We take a frying pan, pour in butter (again a matter of taste, I generally prefer butter). We lay the onion, lightly fry it, add the beets. Fry a little over medium heat without a lid. Add carrots, turnips, chopped parsley, after a couple of minutes a little broth. When the vegetables are half cooked, add sugar, vinegar and cabbage, after another 5 minutes - potatoes, simmer for another 10 minutes, add tomato paste and after 5 minutes transfer to a saucepan with the main broth. It is better to remove the meat from it in advance, free it from the bones and cut it. Salt, pepper, add spices, chopped ham, chopped meat from broth and bring to readiness. Pour into bread "pots" and decorate with herbs. Serve with sour cream.

  • Of course, this dish is not for every day. And it is very pleasant to serve the guests or surprise the husband with another such serving of the first course!
