Ingredients

Cooking method

  • Cut the meat into plates, beat off with a hammer, cut into long strips across the fibers.
  • Put the meat in a saucepan, pour water to half the height of the meat, season with salt to taste, and simmer until half cooked. The meat cooks quickly. I cooked meat in the CUCKOO 1054 Multicooker, Multi-cook mode, time 5 minutes, 110 * С.
  • Heat the ghee in a frying pan, transfer the meat from the broth, chopped onion into thin strips, spices, fry until the onion is ready, stirring constantly.
  • In a bowl, dilute sour cream in broth, add flour, stir until smooth with a whisk. I used broth from stewing meat.
  • We mix the meat with sour cream, the sauce thickens quickly, so we boil the sauce for just a few minutes, stirring constantly. To make the sauce thinner or thicker, add more broth or water to the sauce, according to your taste. If sour cream is added to meat at the end of cooking, it will never curl up, boil, will not flake, and soft meat will have time to soak in sour cream and goodies.
  • Add the crushed garlic to the pan just before the end of cooking so that only a slight smell of garlic remains in the sauce.
  • I cooked beef stroganoff in the CUCKOO 1054 Multicooker, Browning mode, time until cooked.
  • Put the finished beef stroganoff on portioned plates, along with a side dish.
  • It is good to serve boiled potatoes or boiled rice with meat, and always a light vegetable salad!

This is my version of the preparation of beef stroganoff, of which there are a great many - but the base is meat with strips and sour cream sauce.

I used to cook beef stroganoff entirely in a skillet, including roasting meat. But, veal or beef is still rather dry, and it is difficult to achieve softness in a pan.

And be sure to spread sour cream with broth!

Therefore, I first stew the meat until half cooked, then fry it in the sauce. It always turns out very soft meat soaked in spices and sour cream!
