Cooking method

  • I cook this soup exclusively as a lean version, but you can cook it in any broth. So the first step in the case of a "non-lean" option will be boiling broth, beef, pork or chicken.
  • While the broth is boiling, we fry (onions, carrots, tomato paste and tomatoes, with the skin previously removed) and steam the beets, if you chose the option with beets. I am also that beet grower, so my beets are always more like burdocks with small beets, so everything goes into my play! So, the frying is fried, the broth is boiled, the beets are steamed .... We cut the potatoes. We take the tops, wash well, especially the petioles and cut them arbitrarily, the petiole is smaller, the leaf can be large.
  • When the broth is ready, take out the meat, filter the broth, finely, or, as you like, cut the meat and return it to the broth, put the frying there and bring to a boil, when the broth boils, put the chopped potatoes and cook until cooked. When the potatoes are ready, add citric acid, sugar, tops and cook for 5 minutes, then add the steamed beets grated on a grater, bring to a boil and turn off. We set to insist-languish.
  • Serve with sour cream, sprinkle with herbs, garlic, pour in a glass, well, don’t forget the donuts. Bon Appetit! Yes, lard, do not forget lard!
